MEATLOAF WITH CHILI SAUCE

Meatloaf With Chili Sauce image

Covering the cooked meatloaf with chili sauce then returning it to the oven for a few minutes gives a slightly sweet, mildly spicy glaze on top.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Beef Recipes     Ground Beef Recipes

Time 1h15m

Number Of Ingredients 11

1/2 cup milk
4 slices white sandwich bread, torn into pieces
1 1/2 pounds ground sirloin
1 1/2 pounds ground pork
2 small onions, finely chopped
6 garlic cloves, minced
1/2 cup chili sauce, plus 1/4 cup for glaze
1 cup chopped fresh parsley
1/2 cup grated Parmesan cheese
2 large eggs, lightly beaten
Coarse salt and ground pepper

Steps:

  • Preheat oven to 350 degrees, with rack in center. In a large bowl, pour milk over bread; let soak, about 30 seconds. Add sirloin, pork, onion, garlic, 1/2 cup chili sauce, parsley, Parmesan, eggs, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper. Using your hands, mix until combined; do not overmix or meatloaf will be dense.
  • Divide mixture in half. Gently pat each half into a log, and place each log in an 8 1/2-by-4 1/2-inch loaf pan. Do not press down or into corners.
  • Bake 50 minutes. Brush tops of loaves with remaining 1/4 cup chili sauce; continue cooking until juices run clear and an instant-read thermometer inserted into thickest part registers 160 degrees, about 10 minutes.
  • Remove from oven; let rest 5 minutes. Turn loaves out of pans; slice each into eight 3/4-inch-thick slices.

LEFTOVER MEATLOAF CHILI

Leftover Meatloaf Chili image

Got leftover meatloaf and you're tired of sandwiches (like if anyone could be;) and you want something different? Try this very good recipe. Be careful though, the way that this is written it's very spicy. (Well at least to me anyway :)). I let this simmer for about 30 minutes for a better flavor. This recipe will serve two very hungry people or 3 not so hungry people. Submitted to "ZAAR" on October 12,2007

CHILI GLAZED MEATLOAF

Chili Glazed Meatloaf image

This is a really delicious version of Meatloaf that I really love. I like the sweet tang of the Chili Sauce. This is adapted from Martha Stewart's recipe, but I have changed a few of the ingredients to suit what I had in my pantry. It's just the two of us, so I made a small meatloaf, which was perfect! NOTE - if you double...

This is a gift for all occasions, especially when there is a loss in someone's family. The gift can be eaten right away, cold or heated. It can frozen and warmed for another day. It is a little spicy but very comforting. It is a perfect gift for a neighbor at Christmas. There will be tons of cooking, cakes and pies but no one thinks of giving a meat loaf which could be used for another day. Especially during the preparation of the holiday season, when everyone is happy but tired and weary.

CHILI CHEESE MEATLOAF

Chili Cheese Meatloaf image

Definitely not your same-old every-day meatloaf! Mexican flavor and cheeses give a wonderful zip to this easy dish. Delicious served with mashed potatoes!

Provided by stonecoldcrazy

Categories     Meat

Time 1h30m

Yield 4 serving(s)

Number Of Ingredients 13

2 eggs, beaten
1 1/2 lbs ground beef
15 -20 Ritz crackers, crushed (1 sleeve)
2 teaspoons garlic salt
1 tablespoon ground cumin
1 tablespoon chili powder
1 teaspoon ground coriander
2 garlic cloves, minced
1/2 vidalia onion, minced
1 cup cheddar cheese, shredded
1 cup monterey jack cheese, shredded
1 cup ketchup, for topping
1 -2 tablespoon chili sauce, for topping

Steps:

  • Preheat oven to 350°.
  • With hands, gently combine all ingredients in a mixing bowl.
  • Shape into a loaf and place in a loaf pan.
  • Slather the top with ketchup or chili sauce.
  • Bake for 1 to 1 1/2 hours, until cooked through.

Tips:

  • Choose the right meat: For a flavorful and juicy meatloaf, use a combination of ground beef and ground pork. This combination provides a good balance of lean and fatty meat, resulting in a moist and tender loaf.
  • Add some heat: Chili powder, cumin, and cayenne pepper give this meatloaf a nice kick of heat. You can adjust the amount of each spice to suit your taste preferences.
  • Don't forget the moisture: Ketchup, Worcestershire sauce, and tomato paste add moisture and flavor to the meatloaf. They also help to bind the ingredients together.
  • Bake it low and slow: Meatloaf is best cooked at a low temperature for a long period of time. This allows the meat to cook evenly and thoroughly without drying out.
  • Let it rest before slicing: Once the meatloaf is cooked, let it rest for 10-15 minutes before slicing. This allows the juices to redistribute throughout the loaf, resulting in a more tender and flavorful slice.

Conclusion:

This chili meatloaf is a hearty and flavorful dish that is perfect for a weeknight dinner. It's easy to make and can be tailored to your own taste preferences. Serve it with mashed potatoes, green beans, or a side salad for a complete meal.
