10 uncooked manicotti shells
2 cups shredded part-skim mozzarella cheese, divided
1 carton (15 ounces) ricotta cheese
1/4 cup shredded Parmesan cheese
1 large egg, lightly beaten
3 cups Four-Bean Taco Chili
1 jar (14 ounces) meatless spaghetti sauce
Minced fresh parsley, optional

Steps:

  • Cook manicotti according to package directions. Meanwhile, in a large bowl, combine 1 cup mozzarella cheese, ricotta cheese, Parmesan cheese and egg; set aside. Combine the chili and spaghetti sauce; pour half into a greased 13x9-in. baking dish., Rinse and rain manicotti shells; stuff with cheese mixture. Place over sauce. 4 manicotti
1 tablespoon oil
2 tablespoons onions, chopped
1 garlic clove, chopped
1 (16 ounce) can beef chili with beans
1 cup water
1 egg
3/4 cup cottage cheese
1 cup cheddar cheese, grated

Steps:

  • Preheat oven to 350 degrees. Cook manicotti shells as directed on package; drain.
  • Meanwhile, add oil to a large skillet and saute onion and garlic until tender. Stir in chili and water. Bring to a boil; reduce heat and simmer 2 minutes.
  • In a small bowl combine egg, cottage cheese and cheddar cheese. Stuff into manicotti shells.
