Tips:

  • Tenderize the pork: Using a meat mallet or the side of a heavy knife, lightly pound the pork chops to an even thickness. This will help them cook evenly and stay tender.
  • Use fresh lime juice: Fresh lime juice is essential for this recipe. It adds a bright, citrusy flavor that really shines through. If you don't have fresh lime juice, you can use bottled lime juice, but the flavor will be less pronounced.
  • Don't overcrowd the pan: When searing the pork chops, don't overcrowd the pan. If you do, the pork chops will steam instead of sear and they won't get that nice crust. Cook the pork chops in batches if necessary.
  • Cook the pork chops to the right temperature: The internal temperature of the pork chops should be 145 degrees Fahrenheit for medium-rare or 160 degrees Fahrenheit for medium. Use a meat thermometer to ensure that the pork chops are cooked to your desired doneness.
  • Let the pork chops rest: After cooking the pork chops, let them rest for a few minutes before serving. This will allow the juices to redistribute and the pork chops will be more tender.

Conclusion:

This chili lime pork recipe is a delicious and easy-to-make dish that is perfect for a weeknight meal. The pork chops are tender and juicy, and the chili lime sauce is flavorful and tangy. Serve the pork chops with your favorite sides, such as rice, beans, or salad.
