Time 45m

Yield 10

Number Of Ingredients 8

2 cups oil for frying
¼ cup chopped onion
30 (6 inch) corn tortillas, torn into strips
6 eggs, lightly beaten
2 teaspoons salt
1 (7.75 ounce) can Mexican style hot tomato sauce
½ cup water
½ cup shredded Monterey Jack cheese

Steps:

  • In a large, heavy skillet, heat the oil to 350 degrees F (175 degrees C). Carefully stir in the onion and tortilla strips. Fry until tortilla strips are crisp and golden brown. Remove from heat, and drain on paper towels. Drain the skillet, leaving only a thin residue of oil.
  • Over medium heat, return tortillas to the skillet, and stir in the eggs. Season with salt. Cook and stir until eggs are firm.
  • Mix Mexican style hot tomato sauce and water into the skillet. Reduce heat, and simmer until thickened, about 10 minutes. Top with cheese. Continue cooking until cheese has melted.

Yield Makes about 1/2 pound

Number Of Ingredients 6

16 corn tortillas
vegetable oil for brushing the tortillas
1 tablespoon chili powder
1 teaspoon salt
1/2 teaspoon dried orégano, crumbled
1 1/2 cups grated Monterey Jack (about 6 ounces)

Steps:

  • Brush the tortillas lightly on one side with the oil. In a small bowl combine well the chili powder, the salt, and the orégano, sprinkle the mixture over the tortillas, and scatter the Monterey Jack on top. Cut each tortilla into fourths with a pizza wheel or sharp knife, arrange the wedges on 2 large baking sheets, and bake them in a preheated 400°F. oven for 12 to 15 minutes, or until they are golden and crisp.

Tips:

  • Use high-quality ingredients: The better the ingredients you use, the better your chili jack tortilla chips will be. Look for fresh, ripe tomatoes, onions, and peppers. Use a good quality chili powder and cumin. If you can, use fresh cilantro instead of dried.
  • Don't be afraid to experiment: There are many ways to make chili jack tortilla chips. You can adjust the heat level by adding more or less chili powder. You can also add other spices, such as garlic powder, onion powder, or paprika. Get creative and have fun!
  • Be patient: Making chili jack tortilla chips takes time. Don't rush the process. Allow the dough to rest for at least 30 minutes before rolling it out. And be careful not to overcook the chips. They should be crispy, but not burnt.

Conclusion:

Chili jack tortilla chips are a delicious and versatile snack. They're perfect for parties, potlucks, or just a casual snack. They're also a great way to use up leftover chili. So next time you're looking for a tasty and easy snack, give chili jack tortilla chips a try. You won't be disappointed!
