Chili-Cheese Wonton Cups image

Baked in miniature muffin cups, wonton wrappers make perfect little cups for these crunchy Southwestern bites. In addition to two different cheeses, green chilies and chives, Lyn Renwick of Charlotte, North Carolina seasons the cups with a hint of cumin.

24 wonton wrappers
Refrigerated butter-flavored spray
1 cup shredded reduced-fat cheddar cheese
1/2 cup reduced-fat ricotta cheese
1 can (4 ounces) chopped green chilies, well drained
1 tablespoon minced chives
1/4 teaspoon salt
1/4 teaspoon ground cumin
3 tablespoons sliced ripe olives

Steps:

  • Press the wonton wrappers into miniature muffin cups coated with cooking spray, forming a cup. Spritz with butter-flavored spray. Bake at 350° for 8-9 minutes or until edges are golden. , In a small bowl, combine the cheeses, chilies, chives, salt and cumin. Spoon into cups. Top with olives. Bake for 10 minutes longer or until golden brown and bubbly. Serve warm.

Bun-free fried chicken takes on an Asian flavor when it's brushed with a spicy chili sauce and served in lettuce cups with crisp sliced carrots and cucumbers.

Vegetable oil, for frying (6 to 8 cups)
4 boneless, skinless chicken thighs (12 ounces total)
2 1/2 cups unbleached all-purpose flour
1 cup buttermilk, room temperature
1 tablespoon Old Bay seasoning
1/2 teaspoon baking powder
Kosher salt and freshly ground pepper
1/4 cup honey
1 to 2 tablespoons sambal oelek
1 tablespoon fresh lime juice
1 tablespoon reduced-sodium soy sauce
Cilantro leaves, Bibb lettuce, sliced cucumbers and carrots, and lime wedges, for serving

Steps:

  • Fried Chicken: Fill a large, heavy pot halfway with oil; heat over medium until it registers 375 degrees on a thermometer. (Bringing the heat up slowly helps maintain a steady cooking temperature.) Meanwhile, pound chicken thighs to an even thickness. Let stand, covered, 30 minutes, while setting up a dredging station: Place 1 cup flour in a shallow dish, stir together buttermilk and Old Bay in a bowl, and stir together remaining 1 1/2 cups flour and baking powder in another shallow dish. Season all three with salt and pepper.
  • Stir 1/3 cup buttermilk mixture into baking-powder mixture; it will create small flour clumps, which will give the chicken a delicious craggy surface once it's fried. Two pieces at a time, dredge chicken in plain flour, then dip in remaining buttermilk mixture, allowing excess to drip off. Place in clumpy flour mixture, pressing firmly to adhere and completely coat chicken. Transfer to a rimmed baking sheet fitted with a wire rack.
  • Working in batches, fry chicken, flipping once, until golden brown and cooked through, about 4 minutes a batch, adjusting heat as needed to keep oil temperature between 360 and 380 degrees. Transfer to a clean wire rack to drain (and lock in that fresh-from-the-fryer crunch). Season with salt; let cool 10 minutes. To serve, lightly brush cut sides of rolls with softened butter; toast in a dry skillet over medium-high heat until golden, 2 to 3 minutes.
  • Lettuce Cups: In a small saucepan over medium heat, simmer honey, sambal oelek, fresh lime juice, and reduced-sodium soy sauce until reduced to about 1/3 cup. Let cool; brush over fried chicken. Slice into strips and serve with cilantro leaves, Bibb lettuce, sliced cucumbers and carrots, lime wedges, and remaining sauce for dipping.

3 ounces cream cheese, softened
1 cup finely chopped fully cooked ham
1 cup shredded cheddar cheese
1 can (4 ounces) chopped green chilies, drained
1/4 cup sliced ripe olives, drained
1 tube (10.2 ounces) refrigerated biscuits
Salsa and sour cream, optional

Steps:

  • In a small bowl, combine the cream cheese, ham, cheese, chilies and olives. Separate dough into 10 biscuits; press each biscuit onto the bottom and up the sides of a greased muffin cup. Fill with ham mixture., Bake at 375° for 20-25 minutes or until cheese is melted and crust is golden brown. Let stand for 2 minutes before removing from pan. Serve warm. Garnish with salsa and sour cream if desired.

1 pound ground beef
1 medium green pepper, diced
1 medium onion, diced
3 garlic cloves, minced
1 can (8 ounces) tomato sauce
2 tablespoons water
1/2 teaspoon salt
1/2 to 1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon celery seed
1/4 teaspoon dill weed
1/8 to 1/4 teaspoon cayenne pepper
2 loaves (1 pound each) sliced Italian bread
Grated Parmesan cheese

Steps:

  • In a large skillet, cook beef, green pepper, onion and garlic over medium heat until meat is no longer pink; crumble meat; drain. Stir in the tomato sauce, water and seasonings. Bring to a boil over medium heat. Reduce heat; cover and simmer 30 minutes, stirring occasionally. , Meanwhile, cut circles from bread slices using a 2-1/2-in. biscuit cutter. Press the circles into greased miniature muffin cups. , Bake at 400° for 5-6 minutes or until lightly toasted. Remove from tins and cool on wire racks. Fill each bread cup with about 1 tablespoon chili mixture; sprinkle with Parmesan cheese. Broil for 2-3 minutes or until cheese is golden brown.
