3/4 cup good olive oil
Kosher salt and freshly ground black pepper
1 tablespoon chopped fresh thyme leaves
2 pounds boneless chicken breasts, halved and skin removed
8 cups broccoli florets (4 heads)
1/2 pound farfalle (bow tie) pasta
2 tablespoons unsalted butter
1/4 cup good olive oil
1 teaspoon minced garlic
Zest of 1 lemon
Kosher salt and freshly ground black pepper
1/4 cup freshly squeezed lemon juice
1/4 cup toasted pine nuts
1/4 cup freshly grated Parmesan cheese

Steps:

  • For the chicken, whisk together the lemon juice, olive oil, 2 teaspoons salt, 1 teaspoon pepper, and thyme. Pour over the chicken breasts in a nonreactive bowl. Cover and marinate in the refrigerator for 6 hours or overnight.

  • Clean cutlets and cut into cubes. Dredge them in flour, egg and flour, brown in frying pan with olive oil and butter. As they come out of pan let them rest on paper towels to absorb oil. When all the chicken has been browned, put all chicken back into the same pan without cleaning add garlic, Italian seasoning, marsala, chicken broth, mushrooms, and tomatoes. 2 lbs boneless chicken breasts
1 teaspoon salt
1 teaspoon black pepper

1 medium yellow onion, diced

1 (28 ounce) jar pasta sauce
1 cup heavy whipping cream
3 tablespoons fresh basil (or 1 tsp dried)
1 1/2 cups shredded mozzarella cheese

  • Preheat the oven to 350°F Start cooking pasta according to directions and drain. While pasta is cooking --.

2 tablespoons all-purpose flour
12 ounces evaporated milk (low fat or regular)
1/2 cup milk
1/4 cup chicken broth
1 cup shredded asiago cheese
1 tablespoon olive oil
1 lb boneless chicken breast, cut into cubes
2 tablespoons fresh parsley, chopped
1 garlic clove, minced
1/2 teaspoon salt
