A creamy rendition of a traditional favorite. This has made me a SouperHero in my house. This meal is full-bodied enough to not need the addition of a sandwich; however, garlic bread is nice for dipping.

Tips:

  • Use ripe, flavorful tomatoes: The quality of your tomatoes will greatly impact the flavor of your soup. Look for tomatoes that are deep red and have a sweet, slightly acidic flavor.
  • Roast the tomatoes before adding them to the soup: Roasting the tomatoes concentrates their flavor and gives them a slightly smoky taste. This step is optional, but it's highly recommended.
  • Use a good quality chicken broth: The chicken broth is the base of your soup, so it's important to use a good quality broth that has a rich, flavorful taste. You can use homemade chicken broth or a high-quality store-bought broth.
  • Don't overcrowd the pot: If you add too much chicken or vegetables to the pot, the soup will be too thick and the vegetables will not cook evenly. Add the chicken and vegetables in batches if necessary.
  • Simmer the soup for at least 30 minutes: This will allow the flavors to meld and develop. The longer you simmer the soup, the better it will taste.
  • Season the soup to taste: Once the soup is done simmering, taste it and adjust the seasonings as needed. You may want to add more salt, pepper, or herbs.
  • Serve the soup with your favorite toppings: Some popular toppings for chicken tomato basil soup include grated Parmesan cheese, croutons, and fresh basil leaves.

Conclusion:

Chicken tomato basil soup is a classic soup that is easy to make and always a crowd-pleaser. It's a great way to use up leftover chicken and vegetables, and it's also a healthy and delicious meal.
