Yield Makes enough for 6 servings

Number Of Ingredients 11

4 bone-in skin-on chicken breast halves
1 tablespoon olive oil
2 pounds tomatillos
2 serrano chiles
1/2 head garlic, unpeeled, cloves separated
1 large onion, quartered
2 small poblano peppers
1/2 bunch fresh cilantro
1/2 teaspoon cumin
Juice of 2 limes, plus more if desired
Coarse salt and freshly ground pepper

Steps:

  • Preheat oven to 350 degrees.
  • Place chicken breast, skin side up, on a rimmed baking sheet; drizzle with olive oil and generously season with salt and pepper. Transfer to oven and bake for 40 minutes. (Chicken may not be cooked through.)
  • Remove from oven and let stand until cool enough to handle. Using your fingers or a fork, remove meat from bones and shred into large pieces; set meat aside, discarding bones.
  • Preheat broiler. Place tomatillos on a rimmed baking sheet. Place chiles, garlic, onion, and poblano peppers on another rimmed baking sheet. Transfer both baking sheets (one at a time, if necessary) to broiler and broil, turning once, until vegetables are charred and softened, about 10 minutes.
  • Transfer poblanos to a small bowl and cover with plastic wrap; let steam for 10 to 15 minutes. Let remaining vegetables cool slightly and peel garlic. Uncover poblanos and, using a paper towel, remove skins. Remove seeds and stems and coarsely chop. Transfer chopped poblanos to the jar of a blender along with tomatillos, chiles, garlic, onion, cilantro, cumin, and lime juice; blend until slightly smooth but a few chunks remain and season with salt and pepper.
  • Transfer pureed tomatillo mixture to a large saucepan and add reserved chicken; place over medium heat and simmer until chicken is no longer pink and completely warmed through. Season with salt and pepper and add more lime juice, if desired. Keep warm until ready to use.

CHICKEN BREAST WITH ROASTED TOMATILLO SAUCE

Chicken Breast With Roasted Tomatillo Sauce image

Easy mexican Main Course with the beautiful flavor of tomatillo. Great dish to try if you never had a tomatillo

Provided by R. Warren Meddoff

Categories     Chicken Breast

Time 35m

Yield 4 serving(s)

Number Of Ingredients 10

3/4 lb tomatillo, husked and rinsed (8 or so)
1 medium jalapeno chile
5 tablespoons olive oil, divided
1 cup chopped onion
1 tablespoon chopped garlic
1 1/2 cups chicken broth
2 teaspoons brown sugar
1/2 cup cilantro leaf, and tender stems rough-chopped divided
4 (8 -10 ounce) chicken breast halves (8- to 10-ounce bone-in, skin-on)
1/2 cup sour cream (to garnish)

Steps:

  • Lightly oil a rimmed baking sheet or baking pan and roast tomatillos and jalapeno or chilies under a hot broiler, 4 inches or so from the heat source, 3 to 4 minutes, or until they are blistered and splotchy brown with, maybe, a few black spots. Turn them and roast on the other side. Cool, then transfer tomatillos and chilies to a food processor fitted with the metal blade or blender along with any of the juices on the pan. Process or puree until smooth.
  • Meanwhile, over medium heat in a heavy-bottomed saucepan, heat 2 tablespoons olive oil. Add onions and garlic and cook, stirring, about 6 minutes until golden brown. Raise heat to medium high, add tomatillo puree and cook 3 minutes until sauce darkens and is very thick. Add broth, brown sugar and 1/4 cup cilantro. Stir, reduce heat and simmer, uncovered, 10 minutes or until sauce thickens. Season with salt and pepper. Set sauce aside.
  • Season chicken liberally with salt and pepper. Heat 3 tablespoons olive oil over medium-high heat in an oven-proof skillet large enough to hold chicken in one layer. Add chicken, skin side down, and cook 5 minutes until skin is richly browned. Turn and cook on bone side 2 minutes or so. Remove chicken from pan and pour out all but 1 tablespoon fat. Add tomatillo sauce and bring to a simmer. Nestle chicken pieces, skin side up, in the sauce, place in preheated 375-degree oven and bake 15 minutes, or until chicken is cooked. (Check with point of a small knife near the bone to make sure chicken is cooked through.)
  • Place one piece of chicken in each of four shallow bowls, spoon sauce around, top with crema or queso fresco and sprinkle remaining cilantro over.

Tips:

  • Use fresh, ripe tomatillos. Tomatillos are the star of this dish, so make sure they are fresh and ripe. Look for tomatillos that are firm, green, and have no blemishes.
  • Roast the tomatillos. Roasting the tomatillos intensifies their flavor and gives them a slightly smoky taste. You can roast the tomatillos in the oven or on a grill.
  • Use a good quality refried black bean spread. Refried black beans are a delicious and versatile ingredient that can be used in a variety of dishes. When choosing a refried black bean spread, look for one that is made with real black beans and has a smooth, creamy texture.
  • Make your own cabbage-pepper slaw. The cabbage-pepper slaw is a refreshing and flavorful addition to these tostadas. It is easy to make and can be made ahead of time.
  • Assemble the tostadas just before serving. Tostadas are best when they are served fresh and crispy. Assemble the tostadas just before serving to prevent the tostada shells from getting soggy.

Conclusion:

These chicken tomatillo tostadas are a delicious and easy-to-make meal that is perfect for a quick lunch or dinner. The combination of roasted tomatillos, refried black beans, cabbage-pepper slaw, and chicken is both flavorful and satisfying. These tostadas are also a great way to use up leftover chicken. For more flavor variations, try using different types of salsa or hot sauce, or add some crumbled cheese or avocado to the tostadas.
