My mom has made this for our family of seven as long as I can remember. It goes wonderfully with sweet potato muffins! Makes a huge batch! It would take us a week to eat all of it. Nowdays I usually make one pan, freeze one pan, and give one pan away! Preparation and cooking time does not include chicken.

CHICKEN TETRAZZINI

Chicken Tetrazzini image

Our freezer-friendliest chicken recipe makes one casserole that will serve 4 tonight, plus a second meal to freeze and pull out when you're in a pinch.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Chicken

Time 1h10m

Number Of Ingredients 12

Coarse salt and ground pepper
6 tablespoons butter
1 pound white mushrooms, trimmed and sliced 1/4 inch thick
1/2 cup all-purpose flour
3 cups milk
1 can (14.5 ounces) reduced-sodium chicken broth
3/4 cup dry white wine
3 cups grated Parmesan cheese
1/2 teaspoon dried thyme leaves
1 pound linguine, broken in half
1 rotisserie chicken, skin removed, meat shredded (about 4 cups)
1 package (10 ounces) frozen peas, thawed and drained

Steps:

  • Preheat oven to 400. Bring a large pot of salted water to a boil (for pasta). In a large saucepan, melt 2 tablespoons butter over high heat. Add mushrooms, and season with salt and pepper. Cook, tossing frequently, until tender and browned, 8 to 10 minutes. Transfer to a bowl, and set aside.
  • Make sauce: In same saucepan, melt remaining 4 tablespoons butter over medium heat. Add flour; cook, whisking, about 1 minute. Whisking constantly, gradually add milk, broth, and wine. Bring to a boil; reduce to a simmer, and add 2 cups Parmesan and thyme. Season with salt and pepper.
  • Cook pasta 2 minutes less than package instructions for al dente; drain and return to pot. Add sauce, chicken, peas, and mushrooms. Toss well to combine. Divide between two shallow 2-quart baking dishes; sprinkle with remaining Parmesan. Freeze (see below) or bake until browned, about 30 minutes. Let stand 10 minutes before serving.

Tips:

  • Mise en Place: Before beginning, ensure all ingredients are measured, prepped, and ready for use, including cooked chicken, sautéed mushrooms, and cooked pasta. This will expedite the cooking process and prevent scrambling during the assembly stage.
  • Use High-Quality Ingredients: Employ fresh, flavorful components like free-range chicken, wild mushrooms, and a robust white wine. These premium ingredients will elevate the dish and make it extra special.
  • Don't Overcook the Chicken: Avoid overcooking the chicken to maintain its tender, succulent texture. Simply poach or boil it until it reaches an internal temperature of 165°F (74°C).
  • Sauté the Mushrooms in Butter: Sauté the mushrooms in butter for a luscious, rich flavor. This step adds an umami depth that complements the other ingredients.
  • Use a Good Quality White Wine: Select a dry white wine that you enjoy drinking. The wine will infuse the sauce with its flavor, so choose one that you appreciate the taste of.
  • Don't Boil the Sauce: Once you add the cream to the sauce, bring it to a simmer but do not let it boil. Boiling will cause the cream to curdle and ruin the sauce.
  • Use Fresh Herbs: Incorporate fresh herbs like thyme, rosemary, or parsley into the sauce for an extra layer of flavor.
  • Serve Immediately: Chicken Tetrazzini is best enjoyed fresh out of the oven. Garnish with additional Parmesan cheese and chopped parsley before serving.

Conclusion:

Chicken Tetrazzini is a classic comfort food dish that is perfect for feeding a crowd. It's creamy, cheesy, and packed with flavor. With its simple yet elegant presentation, this dish is sure to impress your guests. Follow these tips to ensure your Chicken Tetrazzini turns out perfectly every time. Remember to serve it fresh out of the oven, garnished with extra Parmesan cheese and chopped parsley, for a truly memorable culinary experience.
