2 stalks celery, cut into 1/4-inch half-moons
1 onion, chopped
Kosher salt and freshly ground black pepper
1/4 cup all-purpose flour
2 cups chicken broth
1 cup whole milk
4 cups shredded cooked chicken
3 cups frozen tater tots, thawed
1 teaspoon fresh thyme leaves

Steps:

  • Preheat the oven to 450 degrees F.
  • Melt the butter in a large heavy pot over medium-high heat until hot. Add the carrots, celery and onions and season with 1 teaspoon salt and 3/4 teaspoon pepper. Cook, stirring occasionally, until the vegetables are golden, about 12 minutes. Stir in the flour, and then whisk in the broth and milk and bring to a boil, whisking. 4 skinless, boneless chicken strips
1 (10.5 ounce) can chicken gravy
1 (10.5 ounce) can cream of chicken soup
1 cup evaporated milk
1 cup sage and onion stuffing mix (such as Pepperidge Farm®)
½ cup minced onion
2 teaspoons minced garlic
¼ teaspoon celery seed
1 pinch ground black pepper to taste
1 (32 ounce) package frozen bite-size potato nuggets (such as Tater Tots®)
½ cup shredded mozzarella cheese
½ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a 9x13-inch baking pan with cooking spray.

1 pound chicken breast, cut into 1/2-inch cubes
½ onion, chopped
2 potatoes, peeled and cut into 1/2-inch cubes
4 cups frozen mixed vegetables, thawed
1 (12 ounce) jar chicken gravy
1 pinch onion powder, or to taste
1 pinch garlic powder, or to taste
1 pinch dried thyme, or to taste

2 tablespoons ground cumin
2 teaspoons garlic powder
Kosher salt and freshly ground black pepper
1/4 cup olive oil
1 1/2 pounds boneless skinless chicken breast, cut into 1-inch pieces
2 bell peppers (red, yellow or orange) cut into 1/4-inch pieces
1 small onion, diced
1/4 cup all-purpose flour
One 14.5-ounce can low-sodium chicken broth
4 ounces cream cheese, cut into pieces
One 14.5-ounce can black beans, drained and rinsed
1 cup frozen corn kernels
1 1/2 cups Mexican blend shredded cheese
80 frozen potato tots, such as Tater Tots (from about one 32-ounce bag)
Guacamole, sour cream, mild salsa and cilantro, for serving, optional

Steps:

  • Preheat the oven to 425 degrees F.
  • Combine the chili powder, cumin, garlic powder, 1 teaspoon salt and a few grinds of black pepper in a large bowl. Heat the oil in a large ovenproof skillet over medium-high heat. Add 2 tablespoons of the spice mixture and the chicken to the skillet and cook, stirring occasionally, until the chicken is no longer pink on the outside and has released some juices, about 5 minutes (the chicken will finish cooking in the oven). Use a slotted spoon to transfer the chicken to a medium bowl; leave the juices and as much oil as possible in the skillet.
  • Add the bell peppers, onion, 1/2 teaspoon salt and a few grinds of black pepper to the skillet and cook, stirring occasionally, until the vegetables begin to soften, 5 to 6 minutes. Sprinkle the flour over the top and stir to combine. Once the mixture looks sandy, add the broth and cook, stirring constantly, until thickened, 3 to 4 minutes. Add the cream cheese and stir until smooth. Fold in the beans, corn, chicken, 1/2 teaspoon salt and a few grinds of black pepper. Sprinkle the top with 1 cup of the shredded cheese. Remove from the heat.
  • Add the potato tots to the bowl with the remaining 3 tablespoons spice mixture and toss to coat. Arrange the tots over the chicken mixture in a single layer in concentric circles. Sprinkle with any spice mixture left at the bottom of the bowl and the remaining 1/2 cup shredded cheese. Bake until the tots are crispy and the casserole is bubbling, 25 to 30 minutes. Cool for 10 minutes. Serve garnished with guacamole, sour cream, salsa and cilantro, if desired.

Over the years I have received so many request for this recipe, so here it is. This is a recipe passed down to me from my grandmother. I'm not sure where it originated from, but she put her own special touches to it and man is it mouth-watering. I could eat this for a week straight and each day it taste better than the day before.

3 boneless chicken breasts
1 (10 1/2 ounce) can cream of chicken soup
1/4 cup diced celery
1/2 cup diced onion
milk (optional)
1 cup frozen peas
2 tablespoons Miracle Whip
2 cups shredded cheddar cheese
24 ounces frozen tater tots

Steps:

  • Boil chicken, celery, onion in 3 cups of water.
  • Remove chicken when cooked through and dice into bite size pieces.
  • Remove celery and onions from pot, but keep the stock in pot.
  • Continue boiling stock from chicken, celery and onions until it reduces to 1 cup (if you reduce stock to less than 1 cup, not a problem, add milk to measuring cup with stock to equal 1 cup).
  • Stir together in a bowl chicken, onion, celery, frozen peas, Miracle Whip, cream of chicken soup and 1 cup of reduced stock.
  • Pour chicken mixture into greased 9x13-inch baking dish.
  • Sprinkle with 2 cups shredded cheese (I've tried other cheeses, but cheddar seems to hit the spot for me).
  • Top with tater tots.
  • Bake at 350°F for 45 minutes.
  • ENJOY!

2 tablespoons butter
1 small onion, finely chopped, approximately 1 cup
2 stalks of celery, finely chopped, approximately 1/2 cup
2 cloves garlic, finely chopped
2 skinless, boneless chicken breasts, cut into cubes
1 - 2 lb package of tater tots, divided
1 1/2 cups shredded sharp cheese, divided
8 slices of bacon, cooked and crumbled, divided (I used maple bacon)
1 cup milk
1 package dry ranch dressing mix (I used Hidden Ranch original)
2 cups of frozen mixed vegetables, divided, optional
2 tablespoons finely chopped fresh or dried parsley flakes
Salt and pepper, to taste

Steps:

  • Melt the butter in a small sauce pan and cook the onion and celery until they are soft and translucent in appearance, approximately 3 minutes. Add the finely chopped garlic and continue cooking approximately 2 minutes, being careful not to burn the garlic. Set aside. Place 1/2 the tater tots on the bottom of a crock pot, that has been sprayed with Pam and sprinkle with 1/2 of the cooked onions, garlic and celery. Sprinkle 1/2 cup of the cheese and 1/3 of the bacon over top. Place chicken pieces and 1 cup of the mixed vegetables on top and season with salt and pepper. Place another layer of 1/2 cup of cheese and 1/3 of the bacon crumbles over top. Place another layer of tater tots, cooked onions, celery and garlic, and the mixed vegetables on top, season again with salt and pepper and cover with the remaining cheese and bacon crumbles. Mix the milk with the dry ranch dressing seasoning mix and pour over top OR pour 1 cup of prepared Hidden Valley Ranch Dressing and 1/4 cup of milk over the top. Sprinkle the fresh or dry parsley flakes over the top. Bake in the crock pot for 1 hour on high and then turned it to low for an additional 3 hours. Please be sure to keep an eye on your crock pot while its cooking as different sized crock pot models cook differently. Yours might be just fine at 4 hours on low. Note: you can omit the milk and the Hidden Valley Ranch dry Mix and Substitute 1 cup of already prepared bottled Hidden Valley Ranch Dressing and 1/4 cup of milk in its place if you don't keep the Dry Hidden Valley Mix on hand in your cabinet.   • This "recipe" couldn't be easier. Preheat your oven to 350 degrees. Toss your chicken in a 9×11 baking dish. Pour in some bar-b-que sauce and stir it around. Add more if you need to until the chicken is good and coated. Spread the chicken out so that it covers the bottom of the dish. Top the bar-b-que chicken with tater tots. Top the tater tots with cheddar cheese. Pop it in the oven and bake for about 30 minutes, or until the tater tots are browned and cooked through.

Steps:

  • 1. Prepare your Crock Pot by giving it a good coating of non-stick cooking spray.
  • 2. Next, begin layering in your ingredients. Start with half of the tater tots, followed by 1/3 of the bacon and then 1/3 of the cheese. Now layer in all of your chicken; sprinkle with salt and pepper, to taste.
  • 3. On top of the chicken, layer on another 1/3 of the bacon pieces and a 1/3 of the cheese. Top with the remaining tater tots, then layer on the rest of your cheese and bacon. When done with your layers, pour the milk over the entire thing.

1/4 cup low-fat plain yogurt
