Crispy Chicken Breasts Stuffed with Mushrooms and Goat Cheese image

Extra-virgin olive oil
2 shallots, finely chopped
Kosher salt
2 chicken livers, finely chopped
1 pound wild mushrooms, stemmed and finely chopped (any kind you like; shiitake, oyster or cremini are great)
3/4 cup dry white wine
4 ounces goat cheese, at room temperature
1/2 bunch fresh chives, finely chopped
4 boneless, skinless chicken breasts
1 cup all-purpose flour
2 eggs beaten with 2 tablespoons water
1 1/2 cups panko (Japanese breadcrumbs)
1/2 cup dry white wine
1 1/2 cups chicken stock
1 tablespoon butter

Steps:

  • For the chicken: Coat a large saute pan with olive oil, toss in the shallots, season with salt and bring the pan to a medium-high heat. Cook the shallots for 3 to 4 minutes, stirring frequently.
  • Toss the chicken livers into the pan, stir to combine and cook for 2 minutes. Toss in the mushrooms, stir to combine and season with salt. Cook the mushrooms until they are soft and wilted, 4 to 5 minutes.
  • Add the wine and cook, stirring frequently, until the mushroom mixture is almost dry. Remove from the heat and let cool.
  • Transfer the cooled mushroom mixture to a medium bowl, add the goat cheese and chives and mix until it is a homogeneous mixture. Put the mushroom mixture in a disposable piping bag and reserve.
  • Using a paring knife or boning knife, make an incision in the thick end of each chicken breast. Insert the knife all the way into the chicken breast and slide it back and forth to create a pocket. Try not to poke the knife through the top or bottom of the chicken.
  • Squeeze the mushroom filling into each chicken breast.
  • In 3 separate wide, shallow containers, set up a standard breading procedure: one container of flour, one with the beaten egg mixture and one with the panko.
  • Season the chicken breasts with salt. Using one hand for wet things and one hand for dry things, dredge each chicken breast in the flour. Dip in the egg wash and then pack panko onto each chicken breast. Lay the chicken breasts on a sheet tray and let them rest in the refrigerator for at least 1 hour.
  • Preheat the oven to 300 degrees F. Set up a tray lined with paper towels. Take the chicken breasts out of the refrigerator and let them come to room temperature for 10 to 15 minutes.
  • Coat a large saute pan with olive oil and bring the pan to a medium-high heat. Work in batches if all the chicken breasts do not fit in the pan at the same time. Cook the chicken until well browned on both sides, 5 to 6 minutes per side. Remove the browned chicken and blot it on the paper towels; season with salt immediately. Repeat with the remaining chicken.
  • When all the chicken has been browned and blotted, place the chicken breasts on a wire rack set over a sheet tray and continue to cook for 10 to 15 minutes more in the oven.
  • For the sauce: Meanwhile, ditch the fat from the pan and add the wine. Reduce the wine by half. Add half the chicken stock and reduce that by half. Add the remaining chicken stock and reduce that by half also (this will take a little time so be patient).
  • Taste the reduced stock and season with salt if needed. Remove the pan from the heat and swirl in the butter.
  • Plate the chicken and spoon the pan sauce over the chicken.

4 whole boneless skinless chicken breasts
toothpick
1 (10 ounce) package frozen chopped spinach
2 tablespoons butter
12 small mushroom caps (crimini or button)
2 garlic cloves, cracked or 1/4 teaspoon garlic powder
1 small shallot (quartered)
salt and pepper, to taste
1 cup part-skim ricotta cheese
1/2 cup grated parmigiano-reggiano cheese
1/2 teaspoon ground nutmeg
2 tablespoons extra virgin olive oil
2 tablespoons butter
2 tablespoons flour
1/2 cup white wine (not cooking wine)
1 cup chicken broth

Steps:

  • You will also need: large plastic food storage bags or waxed paper.
  • Place breasts in the center of a plastic food storage bag or between 2 sheets of waxed paper.
  • Pound out the chicken from the center of the bag outward with a mallet or a heavy skillet.
  • Be firm and controlled with your strokes.
  • Defrost spinach in the microwave.
  • Transfer spinach to a kitchen or a piece of cheese cloth.
  • Twist towel around spinach and wring it out until the spinach is very dry.
  • Transfer the spinach to a medium size mixing bowl.
  • Place a non-stick skillet over medium heat.
  • When skillet is hot, add the butter, mushrooms, garlic and shallot.
  • Season with salt and pepper, and saute 5 minutes.
  • Transfer mushrooms, garlic and shallot to a food processor.
  • Pulse to grind the mushrooms, and transfer to the mixing bowl, adding the processed mushrooms to the spinach.
  • Add ricotta and grated cheese and nutmeg to the bowl.
  • Stir to combine the stuffing.
  • Return the skillet to the stove over medium-high heat.
  • Place a mound of stuffing on each breast, and wrap and roll breast over the stuffing.
  • Secure breasts with toothpicks.
  • Add 3 Tablespoons of extra-virgin olive oil to the skillet.
  • Add breasts to the skillet and brown on all sides, about 10 to 12 minutes.
  • The chicken will cook quickly, because it is thin.
  • Remove breasts.
  • Add butter and flour to the skillet.
  • Cook butter and flour 1 minute.
  • Whisk in the wine and reduce for another minute.
  • Whisk in the chicken broth, and then return the breasts to the skillet.
  • Reduce the heat and simmer until ready to serve.
  • Remove the toothpicks.
  • Serve the breasts either whole, or slice on an angle and fan out on the dinner plates.
  • Top the stuffed chicken breasts or sliced stuffed chicken breasts with generous spoonfuls of the sauce.

1/2 cup finely snipped fresh basil leaf
8 portabella mushrooms, each about 4 to 5 inches in diameter
1 lb cooked chicken, cubed (2 average-sized chicken breasts)
1 -2 garlic clove, peeled and minced
1/3 cup chopped green onion
2 tablespoons chopped green peppers, and sweet red and yellow peppers
1 -2 tablespoon minced Italian parsley (no stems)
1 teaspoon dried Italian herb seasoning (optional)
salt, and freshly ground black (optional) or white pepper (optional)
shredded mozzarella cheese (as desired) or cheese, of choice (as desired)
grated parmesan cheese (optional) or romano cheese, as desired (optional)
1 sprig fresh basil (to garnish)

Steps:

  • Preheat oven to 350°F.
  • In a small bowl, combine marinara sauce and basil, blending well; set aside.
  • With a sharp knife, remove stems from mushrooms; coarsely chop stems and set aside.
  • Arrange mushrooms, rounded-side-down in a 12 x 8 x 2-inch baking dish and set aside. In a medium bowl, combine chicken, marinara/basil sauce, garlic, green onion, peppers, Italian parsley, and Italian herbs, if desired, mixing well. May add salt and pepper to taste, if desired.

2 (3/4 lb) chicken breasts, butterflied
2 tablespoons olive oil, divided
3 ounces portabella mushrooms, sliced
4 ounces onions, diced
2 -4 garlic cloves, minced
2 ounces fresh spinach
1/4 cup white wine
1/4 teaspoon dried thyme
1/4 teaspoon rosemary
salt and pepper
1 egg, lightly beaten
1 tablespoon butter
1/4 cup flour

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Heat 1 tablespoon of the olive oil. Saute mushrooms, onions, and garlic for 4 minutes. Add spinach and wine cook until wine is evaporated.
  • Season with thyme, rosemary, salt, and pepper and allow to cool.
  • Place chicken between plastic wrap and pound thin.
  • Season both sides of breast with salt and pepper.

  • Mix first 4 ingredients in small bowl until smooth. Season garlic butter to taste with salt and pepper.Can be prepared 1 day ahead. Cover and refrigerate. Bring to room temperature before using
  • Melt 2 tablespoons garlic butter in heavy large skillet over medium-high heat. Add mushrooms and sauté until tender and all liquid evaporates, about 3 minutes. Add spinach; sauté until just wilted, about 1 minute. Transfer mixture to medium bowl. Cool 30 minutes. Stir in ground almonds and sour cream. Season stuffing with salt and pepper.

2 whole chicken breasts, on the bone
2 cups wild mushroom ragout (see recipe)
3 teaspoons porcini or olive oil
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 tablespoon dry sherry
1 cup mushroom broth
4 thick slices of country bread

Steps:

  • Preheat the oven to 450 degrees. Use a sharp knife to split the chicken breasts in half along the breastbone. Carefully stuff 1/4 cup of the ragout under the skin of each breast. Place in a baking dish, rub each with 1/4 teaspoon of porcini oil, season with salt and pepper and bake for 15 to 20 minutes.
  • Deglaze the pan with the sherry, scraping to incorporate any bits of meat or skin. Add the broth and the remaining ragout, reduce temperature to 300 and return for 5 minutes.
  • Meanwhile, drizzle the remaining oil on the bread, front and back, and toast on both sides.
  • Remove the chicken from the pan and taste the juice. Adjust seasoning with additional salt and pepper. Place the chicken breast on top of the toasted bread. Spoon on the mushrooms and juice and serve.

1 lb lean ground chicken
2 tablespoons divided olive oil
8 large portabella mushrooms
2 cups fresh spinach
1/2 cup dry white wine
1 teaspoon basil
1 teaspoon oregano
1 teaspoon italian seasoning
1 -2 minced garlic clove
1 1/2 cups tomato sauce
1 cup shredded mozzarella cheese

Steps:

  • Clean portabello mushrooms, remove stem and scrape inside to remove brown part.
  • Put mushrooms in a greased 13inch x 11 inch pan, I use cooking spray.
  • Brush inside mushroom caps with 1 tablespoon of olive oil.
  • Brown ground chicken in 1 tablespoon of olive oil, add spices, remove from pan and cool.
  • In the same frying pan add white wine, spinach and garlic scraping up the bits left from the chicken.
  • Cook over medium heat for about 5 minutes til spinach is wilted.
  • Cool and add to chicken.
  • Mix well and put a heaping spoonful onto each mushroom cap.
  • Pour tomato sauce over the mushrooms.
  • Sprinkle cheese on top.
  • Bake uncovered for 25 minutes in 350 degree oven.

Quite some time ago I tried an incredible stuffed mushroom dish at an Italian restaurant. This version takes advantage of precooked chicken for faster prep. There really is no substitute for the demi glace, although homemade is an option, I purchased mine at a local kitchen store. The quantity below will full two large mushroom caps or four medium mushroom caps.

½ cup diced red bell pepper
2 cloves garlic, minced
½ cup uncooked orzo pasta

¼ teaspoon ground black pepper
2 cups chopped cooked chicken
1 cup chopped fresh spinach
2 portobello mushroom caps, gills removed
4 slices smoked mozzarella

Steps:

  • Melt butter in a skillet over medium high heat and cook bell pepper until tender, 3 to 4 minutes. Add garlic during the last 30 seconds and sauté until fragrant. Stir in orzo and add 1 cup chicken broth, demi glace, Italian seasoning, salt, pepper, and chicken. Cook and stir for about 5 minutes. Add 1/2 cup chicken broth. Cook and stir until liquid is absorbed and add the next 1/2 cup chicken broth, about 5 minutes. Repeat until orzo pasta is tender - you may not need all the chicken broth.   • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.

1/4 cup butter or margarine
1 cup onion, chopped
2 cups mushrooms, sliced

1 teaspoon lemon zest, grated
1/3 cup lemon juice
1 cup water
1/2 cup feta cheese, crumbled
6 medium-size boneless, skinless chicken breasts
Salt and pepper
Dijon Mustard Sauce:
3 Tablespoons butter or margarine
3 Tablespoons flour
1 cup chicken broth
1/4 cup cream
3 Tablespoons Dijon mustard

Steps:

  • In medium saucepan, melt butter or margarine over medium heat. Add onion and mushrooms and cook for five minutes, stirring frequently. Add thyme and lemon zest and cook for 2 minutes, stirring frequently. Add lemon juice, water, rice and contents of seasoning packet and bring to a boil. Reduce heat to low boil, cover, and cook for 25 minutes. Remove from heat and let cool for 15 minutes. Mix in feta cheese. While rice is cooling, preheat oven to 375°. 1 large head green cabbage
4 tablespoons extra-virgin olive oil
2 medium onions, sliced
4 cloves garlic, sliced
Salt
1/2 pound white mushrooms, sliced
Ground white pepper
1 pound skinless, boneless chicken breast, ground
1/4 cup minced fresh dill
1/2 cup dry white wine
1 cup chicken stock
1 tablespoon flour
1 cup sour cream

Steps:

  • Place cabbage in freezer overnight. The next day, remove cabbage and, under warm running water, peel off at least 12 large leaves. Cut heavy spines out of leaves. Set leaves aside. Quarter and core remaining cabbage and slice thin.
  • Heat 1 tablespoon oil in a large, heavy sauté pan or 4-quart casserole. Add onions and garlic, dust with salt, cover and sweat on low about 10 minutes, until onions are soft but not brown. Remove onions and garlic. Add 1 tablespoon oil and the mushrooms and sauté on medium until mushrooms are tender and starting to brown. Remove. Finely chop 1 cup of the cooked onions with the mushrooms by hand or in a food processor. Season well with salt and white pepper, then mix with chicken. Add 1 tablespoon dill.
  • Heat remaining oil in pan, add sliced cabbage and rest of sweated onions and cook on medium-low, covered, until cabbage is soft, about 10 minutes. Turn off heat. Place a couple of tablespoons of the chicken mixture on a cabbage leaf, fold and roll leaf around filling. Place seam-side down in pan on cabbage and onions. Repeat with rest of leaves and filling, placing cabbage rolls snugly in pan. Add wine and stock, bring to a simmer, cover and cook gently 40 minutes.
  • Remove cabbage rolls to a platter or bowl. Cover to keep warm. Mix flour with 3 tablespoons of the sour cream until smooth and stir into sliced cabbage and liquid in the pan. Bring to a simmer and cook briefly to thicken. Taste for seasoning. Spoon sliced cabbage mixture onto a rimmed serving platter. Top with cabbage rolls. Mix remaining dill with remaining sour cream, place in a bowl and serve alongside.

8 ounces portabella mushrooms, roughly chopped
4 ounces shiitake mushrooms, roughly chopped
4 tablespoons butter
4 ounces shallots, roughly chopped
2 cloves garlic, chopped
3 tablespoons cognac
2 quarts well-washed spinach
1 pinch nutmeg
4 boneless skinless chicken breasts
salt and pepper
1/4 cup dry white wine
4 tablespoons clarified butter
1 quart strong brown chicken broth
2 tablespoons cognac
1 tablespoon lemon juice
3 tablespoons heavy cream
1 tablespoon butter
salt and pepper

Steps:

  • For the chicken, mince the mushrooms in a food processor and wring out in a kitchen towel to remove as much moisture as possible.
  • Sauté in a pan with butter.
  • Put shallots and garlic in food processor and pulse to mince, then add to mushrooms.
  • Cook mixture slowly over medium heat until moisture has evaporated.
  • Deglaze the pan with the cognac, add salt and pepper to taste.
  • Cook a few minutes to evaporate the cognac.
  • Put spinach in a pan with only as much water as clings to the leaves.
  • Cover and cook only until leaves start to wilt.
  • Cool until you can handle the spinach, then wring out in a towel to remove moisture.
  • Chop finely by hand and add to the mushroom mixture with the nutmeg.
  • Pre-heat oven to 400º F degrees.
  • Pound chicken breasts flat and season with salt and pepper.
  • Spread some of the mushroom/spinach mixture on the breasts, leaving a margin.
  • Roll up tightly.
  • Place some clarified butter in the bottom of an oven-proof pan.
  • Add chicken and top with wine and remaining butter.
  • Cook for 20 minutes.
  • Let rest before carving.
  • For the sauce, reduce the chicken stock until it is syrupy.
  • Add remaining ingredients.
  • Spoon over sliced chicken rolls.

4 boned chicken legs with thighs attached (about 1/2 pound each before boning)
Salt to taste, if desired
Freshly ground pepper to taste
3/4 cup cooked wild rice
2 tablespoons butter
1/4 cup finely chopped onions
1/4 cup finely chopped shallots
1 cup mushrooms cut into half-inch cubes
2 tablespoons Cognac
Cream of chicken sauce (see recipe)
1/4 cup finely chopped parsley

Steps:

  • Prepare the chicken legs. Sprinkle them inside and out with salt and pepper, and set aside.
  • Meanwhile, cook the wild rice and drain.
  • Heat the butter in a skillet and add the onions and shallots. Cook, stirring, until they are wilted. Add the mushrooms and cook about one minute, stirring. Add the wild rice, salt and pepper. Sprinkle with Cognac and stir. Remove from the heat and let cool.
  • Stuff each chicken leg with an equal portion of the filling. Carefully fold over the boned thighs to enclose the filling.
  • Lay out four squares of plastic wrap, one at a time. Place one stuffed leg in the center and carefully fold the plastic wrap to enclose the stuffed pieces. Wrap securely.
  • Place the stuffed chicken legs in one layer in the top rack of a steamer. Set aside. Bring enough water to the boil in the bottom of the steamer to steam the chicken legs when added.
  • When ready to cook, place the chicken legs over the steamer and cover closely. Let the legs steam for about 20 minutes or until done. Serve with cream of chicken sauce. One serving suggestion: Spoon a little of the sauce onto a hot plate, top with the stuffed leg and sprinkle with chopped parsley.

1/4 cup chopped shallot (1 large)
1/2 tablespoons garlic, chopped

3 tablespoons unsalted butter
6 chicken breast halves with skin and bones (2 1/2 to 3 lb total)

Steps:

  • Put oven rack in middle position and preheat oven to 500°F. Line a shallow baking pan with foil. Coarsely grate cheese and set aside in a medium bowl. Pulse mushrooms and shallot in a food processor with thyme, 3/4 teaspoon salt, and 1/4 teaspoon pepper until finely chopped.
