1 chicken, 3 to 3 1/2 pounds, with skin, cut up
3 stalks celery, with leaves, cut into chunks
2 large carrots, cut into chunks
2 yellow onions, peeled and halved
1 parsnip or parsley root (optional)
About 1 dozen large sprigs parsley
About 1 dozen black peppercorns
2 bay leaves
2 teaspoons kosher salt, more to taste
3 tablespoons reserved chicken fat, more if needed
3 leeks, trimmed, halved lengthwise, rinsed and sliced crosswise into thin half-moons
3 large carrots, peeled and cut into small dice
Kosher salt and ground black or white pepper
Egg noodles (fresh or dried), such as packaged wide noodles, spaetzle, fettuccine or pappardelle cut into short lengths (see note)
Finely chopped herbs, such as parsley, scallions, dill or a combination

Steps:

  • Place the chicken, celery, carrots, onions, parsnip (if using), parsley, peppercorns, bay leaves and salt in a large soup pot and cover with cold water by 1 inch.
  • Bring to a boil over high heat, then immediately reduce the heat to very low. Adjust the heat until the soup is "smiling": barely moving on the surface, with an occasional bubble breaking through. Cook uncovered, until the chicken is very tender and falling off the bone, 1 to 1 1/2 hours.
  • When cool enough to handle, use tongs to transfer chicken from the pot to a container. Taste the broth and continue to simmer it until it is concentrated and tasty. Strain broth through a fine sieve (or a colander lined with cheesecloth) into a separate container. Discard all the solids from the strainer (or reserve the vegetables, chill and serve with vinaigrette, if you wish).
  • Refrigerate chicken pieces and broth separately for at least 8 hours (or up to 3 days), until a thick layer of yellow fat has risen to the top of the broth.
  • When ready to finish the soup, use your fingers to separate chicken breast meat from bones and skin. Discard bones and skin. Use two forks to pull the breast meat apart into soft chunks, or use a knife and cut into bite-size pieces. (Reserve dark meat for another use.)
  • Skim chicken fat from top of broth and set aside. Place 3 tablespoons of the fat in a soup pot with a lid. Add leeks, stir to coat, and heat over medium heat until leeks begin to fry. Then reduce the heat to a gentle sizzle and cook, stirring often, until slightly softened, about 3 minutes.
  • Add carrots, sprinkle with salt, stir, and cover the pot. Cook until vegetables are just tender, about 5 minutes more. (Keep in mind that vegetables will continue to cook in the soup.) Do not brown.
  • Pour broth into pot with vegetables and heat to a simmer. Add noodles and simmer until heated through, soft and plumped with chicken broth. Add the breast meat, then taste broth and add salt and pepper to taste. For best flavor, soup should have some golden droplets of fat on top; if needed, add more chicken fat one teaspoon at a time.
  • Serve immediately, in a tureen or from the pot, sprinkling each serving with herbs.

1 whole chicken (about 4 pounds), cut into pieces (including back)
8 cups water
Coarse salt
3 medium onions, thinly sliced (4 cups)
2 celery stalks, sliced crosswise 1/4 inch thick
4 garlic cloves, crushed
6 medium carrots, sliced 1/2 inch thick

Steps:

  • Bring chicken, water, and 1 tablespoon salt to a boil in a large stockpot. Skim foam. Add onions, celery, and garlic. Reduce heat. Simmer, partially covered, for 30 minutes.
  • Remove breast, and set aside. Add carrots. Simmer, partially covered, for 40 minutes.
  • Remove remaining chicken; discard back and wings. Let cool slightly. Remove meat from bones, and cut into bite-size pieces.
  • Stir in desired amount of chicken; reserve the rest for another use. Skim fat. Season with salt.

1 teaspoon whole black peppercorns
2 bay leaf
2 large carrots, chopped
1 large onion, diced
1 cup chopped fresh green beans
4 large potatoes, diced

  • In a large stock pot place chicken frame, bones, giblets etc. Add enough water to cover chicken frame and gently simmer for 90 minutes, covered.

4 pounds flanken
1 beef shinbone with meat
5 carrots, peeled, in large chunks
4 celery stalks in large chunks
1 parsnip, peeled, in chunks
1 turnip, peeled, in chunks
2 parsley roots, peeled and halved
1 onion, peeled and halved
5 garlic cloves, peeled
1 leek, white and light green parts only, halved lengthwise and washed
1 zucchini, trimmed, in chunks
1 bunch parsley
1 bunch dill
2 marrow-bone ends
4 thinly sliced, peeled carrots
4 thinly sliced celery stalks
Salt and freshly ground black pepper

Steps:

  • In a very large pot, combine chicken pieces, flanken and shinbone. Add water to cover, place over high heat and bring to a boil. Reduce heat to medium-low. Carefully remove foam as it forms.
  • When there is no more foam, add vegetables in following order: carrot chunks, celery chunks, parsnip, turnip, parsley roots, onion, garlic, leek and zucchini. As vegetables become tender, remove them.
  • When all vegetables have been removed, add parsley and dill. Simmer until flanken is very tender, about 2 hours. Discard parsley and dill. Remove flanken and chicken, and set aside. Strain soup, then return meat, chicken and shinbone to pot.
  • Before serving soup, remove fat from surface. Add marrow-bone ends, sliced carrots and sliced celery. Place over medium heat, and simmer until vegetables are tender. Remove and discard marrow bones. Remove flanken and chicken; slice and serve separately. Season soup with salt and pepper to taste. Ladle into bowls and serve.

1 large cut-up chicken, preferably stewing or large roaster
2 whole onions, peeled
4 parsnips, peeled
2 stalks celery with leaves
1 rutabaga, peeled
1 large turnip, peeled
1 kohlrabi, quartered (optional)
6 carrots, peeled (slice 2 into matchlike sticks)
6 tablespoons chopped fresh parsley
6 tablespoons fresh dill
Salt and freshly ground pepper to taste
1 whole zucchini, sliced into matchlike sticks
Marrow balls (see recipe)

Steps:

  • In a large saucepan, bring the water and the chicken to a boil. Skim off any residue that accumulates. Add the onions, parsnips, celery, rutabaga, turnip, kohlrabi (if using), 4 of the carrots, 4 tablespoons of the parsley, 4 tablespoons of the fresh dill and salt and pepper to taste. Cover and simmer over low heat for 2 1/2 hours.
  • Strain the soup; remove the meat, celery and onion and discard or use for other purposes. When the soup has cooled slightly, remove the remaining vegetables, slice them into thin strips and return to saucepan.
  • Refrigerate the strained soup until the fat congeals on the surface, about 3 hours or overnight. Skim off the fat.
  • Add the zucchini and the remaining carrots. Add the marrow balls and cook as in Step 3 of the marrow ball recipe. Serve warm, garnished with the remaining parsley and dill.

From COOKS.COM. but altered a bit by me. My husband loved this soup! It is a vegetable soup with meat that I made creamy by using a blender after removing the meat (and all bones). It is an orange tinted soup. I was trying to find a soup like my Grandmother's. This wasn't really like her soup (her's was greener, maybe from split peas and less carrots) but this was very good nevertheless. I didn't add the dill but think it would be good next time.

2 -3 lbs beef short ribs, known as flanken
4 -5 quarts water
6 ounces vegetable soup mix, Manischewitz brand (dried)
1 bay leaf
2 beef bouillon cubes
5 medium carrots
2 stalks celery
2 medium onions
2 potatoes, cubed
2 -3 garlic cloves, crushed, to taste, can use garlic powder too
1 1/2 teaspoons salt, to taste
1/2 teaspoon black pepper, to taste, can use whole peppercorns
fresh dill (optional)

Steps:

  • Grate carrots, celery and onions, and set aside. I blended the soup later so this step is up to you. If you want a creamy soup, no need to grate.
  • In a large pot, cover the flanken with water; bring to boil for 2 minutes; then change water to the full amount (4-5 quarts).
  • Bring this fresh water with flanken to a boil.
  • Add the dried soup mix with contents of seasoning packet enclosed, bouillon cubes and the bay leaf.
  • Cook for 1/2 hour.
  • Add (grated) vegetables and cook for at least 1 hour on a low flame. I cooked it for 2 hours, stirring occasionally.
  • Then add garlic powder or fresh garlic. Salt and pepper, to taste, and add potatoes. Cook for 10-15 minutes more.
  • Taste for seasoning and adjust if necessary.
  • When ready to serve, remove bay leaf.
  • If you want the soup creamy, you may remove veggies to the blender. Be careful for any bones that may have come loose from the short ribs.
  • Meanwhile, put the meat into a separate bowl so that you can remove bones and fat and trim into nice chunks.
  • Once the veggies are blended, you can add it back to the pot with the soup to mix.
  • You may serve in bowls with the meat added or freeze in plastic containers distributing the meat chunks evenly.
  • Serve with bread as a meal in one.

1 lb. beef marrow bones
2 quarts beef stock
3 large yellow onions, chopped fine
2 soup carrots, peeled and diced into 1/4-inch chunks
2 parsnips, peeled and diced into 1/4-inch chunks
2 large potatoes, peeled and diced into 1/4-inch chunks
1 sweet potato, peeled and diced into 1/4-inch chunks
1/2 lb. green beans, cut in 1-inch pieces
1/2 lb. white button mushrooms
1 bag frozen peas
1 bunch curly parsley
1 bunch dill
2 bay leaves
1 c. dried lima beans
1 c. dried green peas
1 c. dried yellow peas
1 c. dried barley
salt and pepper to taste

Steps:

  • Put beef ribs and marrow bones into a heavy soup pot and add cold water until the meat is just covered. Bring to a boil. Skim off the foam from the top of water. Prepare bouquet garni of dill, parsley, and bay leaves. Add vegetables (except peas), dried ingredients, bouquet garni, and stock. Simmer for 60 minutes. Add peas and simmer for another 15 minutes.
