CHICKEN WITH A SHERRY MUSHROOM SAUCE

Chicken with a Sherry Mushroom Sauce image

One of my favorite recipes, this chicken with a sherry mushroom sauce is tender and loaded with rich flavors. Plus it comes together in under an hour, with just 20 minutes of active preparation time.

Provided by Kit

Time 50m

Number Of Ingredients 8

4 Chicken Breasts
Salt and Pepper
2 tablespoons Butter
2 cloves of Garlic (crushed or chopped)
8 ounces Sliced Mushrooms (I like baby bella)
1 cup Dry Sherry
1/3 cup Heavy Cream
1/2 teaspoon Thyme

Steps:

  • Heat your oven to 350 degrees.
  • Melt 1 tablespoon of butter in a large skillet over medium-high heat. Generously salt and pepper both sides of the chicken breasts. Once the butter has melted, add the chicken to the skillet. Then add 1/4 cup of sherry. Cook the chicken for 3 minutes per side, until browned. Then remove the chicken from the skillet and place it on a plate while you work on the sauce.
  • Melt another tablespoon of butter in the same skillet you just used to cook the chicken. Add the garlic and stir, scraping up any brown bits. After a minute add the mushrooms. Generously salt and pepper and toss until the mushrooms are evenly coated with butter. Cook for 2 minutes. Then add the remaining sherry. Let the mushrooms simmer for another 4 minutes. Then stir in the cream and thyme. Let the sauce reduce for 5 minutes then add the chicken back to the skillet. Place the skillet in the oven for 30 minutes so that the chicken can finish cooking. (Make sure you are using an oven-safe skillet!)
  • After 30 minutes in the oven the chicken should be done - serve it with pasta or rice pilaf. Spoon the sauce over the top.

CHICKEN IN SHERRY WINE SAUCE

Chicken In Sherry Wine Sauce image

Comfort food at it's best! Tender chicken you can cut with a fork, simmered in a Sherry wine sauce. This recipe came from my dear friend, Madelyn Charpentier who left us too soon. The original recipe handwritten by her will be posted. I made a couple of changes

Provided by Linda Starr

Categories     Chicken

Time 55m

Number Of Ingredients 7

4 boneless chicken breast or tenders
2 clove minced garlic
2 Tbsp olive oil
1 large onion thinly sliced
1 can(s) cream of chicken soup
2/3 c milk
1/3 c pale dry cocktail sherry

Steps:

  • 1. Saute chicken breast or tenders (I've used both) in olive oil until lightly brown on all sides. Remove chicken and saute garlic (also onion if you like), add cream of chicken soup and milk and mix well. Note: salt and pepper chicken on both sides before cooking.
  • 2. Add the chicken back to the pan and spoon sauce over chicken, place sliced rings of onion over the top. Cover and simmer for 30 minutes. The sliced onion rings on top make for a nice presentation, but I like my onion cooked in the sauce.
  • 3. Add 1/3 cup of Sherry and simmer 5-10 minutes more. I sometimes add a little extra Sherry and mushrooms as shown in picture.
  • 4. Serve with mashed potato's (my fav.) or steams rice.

CHICKEN IN CREAMY DIJON-SHERRY SAUCE

Chicken in Creamy Dijon-Sherry Sauce image

Provided by Tracey Chrenko

Categories     Chicken     Mushroom     Mustard     Poultry     Sauté     Sherry     Summer     Bon Appétit     Michigan

Yield Serves 4

Number Of Ingredients 9

4 boneless skinless chicken breast halves
2 tablespoons (1/4 stick) butter
8 ounces button mushrooms, thinly sliced
1 medium onion, finely chopped
1 generous tablespoon green peppercorns in brine, drained
1 1/4 cups canned low-salt chicken broth
3/4 cup whipping cream
2 tablespoons dry Sherry
1 1/2 tablespoons Dijon mustard

Steps:

  • Season chicken with salt and pepper. Melt butter in heavy large skillet over medium heat. Add chicken and sauté until just cooked through, about 4 minutes per side. Transfer chicken to plate. Add mushrooms, onion and peppercorns to skillet and sauté until onion is tender, about 7 minutes. Add broth, cream, Sherry and mustard to skillet. Simmer until reduced to sauce consistency, scraping up browned bits, about 15 minutes. Return chicken and any accumulated juices to pan. Cook until chicken is just heated through, about 4 minutes longer.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all your ingredients and cooking equipment ready. This will help you stay organized and ensure that your dish turns out perfectly.
  • Choose High-Quality Ingredients: The quality of your ingredients will greatly impact the final dish. Use fresh, organic ingredients whenever possible, and opt for free-range or pasture-raised chicken.
  • Use a Good Sherry: Sherry is a key ingredient in this dish, so it's important to choose a good one. Look for a dry sherry that is aged for at least three years. Avoid cooking sherries, as they are too sweet.
  • Sear the Chicken Properly: Searing the chicken helps to create a flavorful crust and lock in the juices. Make sure your skillet is hot before adding the chicken, and don't overcrowd the pan. Cook the chicken until it is golden brown on all sides.
  • Reduce the Sherry: Reducing the sherry concentrates its flavor and creates a rich, savory sauce. Simmer the sherry in a saucepan until it has reduced by about half.
  • Serve Immediately: Chicken saut with sherry is best served immediately, while the chicken is still hot and the sauce is still bubbling. Garnish with fresh parsley or chives for a pop of color and flavor.

Conclusion:

Chicken saut with sherry is a classic French dish that is both elegant and delicious. It's perfect for a special occasion dinner or a weeknight meal. With its tender chicken, flavorful sauce, and simple ingredients, this dish is sure to impress your family and friends.
