SLOW-COOKER CHICKEN SAUSAGE WITH CABBAGE & APPLES
The cabbage comes out tender without being mushy and gives the slow-cooker chicken sausage a slightly sweet flavor. A splash of vinegar at the end perks up the whole meal with a bit of acidic brightness. There are several varieties of smoked chicken sausage from which you can choose. We recommend using an apple-flavored smoked sausage to complement the apples and vinegar.

Steps:
- Toss together the cabbage, apples, salt, paprika, pepper, and 1 1/2 tablespoons of the olive oil in a 5- to 6-quart slow cooker. Cover and cook on HIGH until the vegetables are tender, 5 to 6 hours.
- Heat the remaining 1 tablespoon oil in a large nonstick skillet over medium-high. Add the sausage, and cook, turning to brown on all sides, about 4 minutes. Remove from the heat; add 3 tablespoons of the vinegar. Return to the heat, and cook until most of the liquid evaporates, about 30 seconds. Add the stock to the skillet; bring to a boil, scraping to loosen the browned bits from the bottom of the skillet. Spoon over the vegetable mixture in the slow cooker. Cover and cook on HIGH until the flavors come together, about 1 hour. Garnish with the fresh parsley leaves, if desired, and serve with a splash of apple cider vinegar.

CHICKEN SAUSAGE PATTIES WITH APPLE AND SAGE
Steps:
- Prepare grill for cooking.
- Stir together all ingredients in a large bowl until combined well.
- Form rounded 3/4 cups of sausage mixture into 2-inch-diameter patties using moistened hands. When fire is medium-hot (you can hold your hand 5 inches above rack 3 to 4 seconds), grill patties on lightly oiled grill rack, turning once, until cooked through, about 6 minutes.
Tips:
- To save time, use pre-cooked chicken sausage. If using raw sausage, cook it thoroughly before adding it to the dish.
- Use a variety of apples for a more complex flavor. Tart apples, such as Granny Smith or Braeburn, pair well with the sweet cabbage and sausage.
- Fresh sage is best for this recipe, but dried sage can be used in a pinch. If using dried sage, use about 1/2 teaspoon.
- Serve the chicken sausage with apples, sage, and cabbage over mashed potatoes, rice, or noodles.
Conclusion:
This easy one-pot meal is perfect for a weeknight dinner. The chicken sausage, apples, sage, and cabbage are all cooked together in a flavorful broth, creating a hearty and satisfying dish. Serve it over mashed potatoes, rice, or noodles for a complete meal.
