Tips:

  • Choose high-quality pesto for the best flavor. If you have time, try making your own pesto using fresh basil, olive oil, Parmesan cheese, pine nuts, and garlic.
  • Use thinly sliced chicken breasts to ensure even cooking and easy rolling.
  • If the chicken breasts are too thick, pound them out with a meat mallet or rolling pin until they are about 1/4-inch thick.
  • Spread the pesto evenly over the chicken breasts, leaving a small border around the edges. This will help prevent the pesto from leaking out while rolling.
  • Roll the chicken breasts up tightly, starting from one long side and rolling towards the other. Secure the rolls with toothpicks or kitchen twine.
  • Bake the chicken rolls at a moderate temperature (350°F/175°C) until they are cooked through and golden brown. This will take about 25-30 minutes.
  • Let the chicken rolls cool slightly before slicing and serving. This will help keep them from falling apart.
