- Place the vegetable broth into a saucepan, and bring to a boil. Stir in the pasta, and boil over medium-low heat until tender, about 8 minutes. Drain pasta, and reserve broth.
- Heat the butter in a skillet over medium heat, and stir in half the spring onions; cook and stir until the onions begin to soften, 2 to 3 minutes, then add the vegetarian chicken-style pieces. Cook until vegetarian pieces are browned, about 3 minutes per side, then stir in remaining onion and green peas. Pour 1/2 cup of reserved vegetable broth into the skillet. Bring the mixture to a boil, cook for 1 to 2 minutes to cook the peas, and stir in the pasta and pesto sauce. Mix in an additional 1/2 cup of broth to form a creamy sauce.

This came my way via an e-mail recipe share. It was originally a dinner cooked in the oven at 350 for an hour but I made it in the crockpot with wonderful results. I tweaked the cheese to suit my tastes so you can reduce it if you're not a cheese lover.

My wife and I invented this dish while we were dating and today, our kids LOVE it. It's a simple dish that's easy to prepare and VERY tasty. For the Cajun Seasoning, we use Chef Paul Prudhomme's Poultry Magic® but your favorite cajun seasoning can be substituted.

Steps:
- Cook pasta according to manufacturer's package directions.
- After pasta is cooked - Slice off a piece of butter and put into a hot skillet.
- Add chicken to the skillet and cook chicken until golden brown, stirring frequently.
- Turn the heat up to high, add cooked pasta, peas and remaining butter.
- As soon as the butter is melted, add the Cajun Seasoning and stir to distribute completely.
- Cook for another minute or two and serve.
ONE POT CREAMY LEMON CHICKEN PASTA WITH PEAS

- 1. melt 1 T butter in dutch oven over med high heat. Add chicken and season gnerously with salt and pepper. Cook until golden brown on all sides about 4-6 min. Remove chicken to a plate.
- 2. Add remaining T of butter. Once melted, add shallot and season with salt and pepper. Cook until softened about 2 min Add garlice and cook about 1 min. Add in flour and cook, stirring for another minute. Add in chicken broth and half and half. Whisk to combine. Add back inthe chiciken along with the pasta dna a large sprig of basil. Bring to a slow boil, stirring occasionally, then immediately reduce toa simmer. Cover and cook for 10-15 min. Remove basil and discard.
- 3. Add in peas, lemon juice and zest. Cook for an additinal minute. Stir in parm and chopped basil. Taste and adjust for seasoning with salt and pepper.
PASTA WITH CHICKEN BACON AND PEAS
Steps:
- Cook pasta. Meanwhile, cut bacon into 1'' pieces. Cut chicken into 1/2 wide strips. Fry bacon until crisp. Remove and drain. Pour off all but 3 Tablespoons of fat. Fry chicken in fat over Medium-High heat until brown. Add peas, bacon, salt and pepper. Cook about 1 minute. Remove from heat. Add drained pasta and grated parmesan cheese. Toss and serve.
