Steps:
- Heat gas or charcoal grill. Cut 4 (18x12-inch) sheets of heavy-duty foil; spray with cooking spray. Sprinkle chicken with garlic-herb blend; place 1 breast on each sheet of foil. Drizzle 1 tablespoon of the dressing over each breast.
- In medium bowl, place remaining 1/4 cup dressing. Stir in potatoes, carrots and green beans. Divide vegetables among chicken breasts. Sprinkle with cheese.
- Bring up 2 sides of foil so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
- Place packs on grill over medium heat. Cover grill; cook 25 minutes. Rotate packs 1/2 turn; cook 15 to 20 minutes longer or until potatoes are fork-tender and juice of chicken is clear when center of thickest part is cut (165°F).
- To serve, cut large X across top of each pack; carefully fold back foil to allow steam to escape.
- To make in oven, place packs on cookie sheet. Bake at 375°F 40 to 45 minutes or until potatoes are tender and juice of chicken is clear when center of thickest part is cut (at least 165°F).

Tips:
- Choose thin-sliced chicken breasts for even cooking. If using thicker breasts, pound them thin before cooking.
- Season the chicken breasts generously with salt, pepper, and Italian seasoning. This will help to flavor the chicken throughout.
- Use a good marinara sauce. A homemade sauce is always best, but a store-bought sauce can also be used. Just be sure to choose a sauce that you enjoy the taste of.
- Don't overcrowd the foil packets. This will prevent the chicken from cooking evenly.
- Seal the foil packets tightly to prevent the juices from leaking out.
- Bake the foil packets at a high temperature (425 degrees F) for about 20 minutes, or until the chicken is cooked through.
- Top the chicken with mozzarella cheese and return it to the oven for a few minutes, or until the cheese is melted and bubbly.
- Serve the chicken parmesan immediately with your favorite sides, such as pasta, mashed potatoes, or roasted vegetables.
Conclusion:
Chicken parmesan foil packets are a delicious and easy way to make a classic Italian dish. This recipe is perfect for busy weeknights or for a casual get-together. With just a few simple ingredients, you can have a flavorful and satisfying meal that the whole family will enjoy. So next time you're looking for a quick and easy chicken dinner, give chicken parmesan foil packets a try!
