12 ounces egg noodles
3 tablespoons butter
1/2 white onion (diced)
3 cloves garlic (minced)
3 tablespoons flour
2 cups chicken broth
1 cup milk
2 cups frozen peas
2 6 ounce cans solid white albacore tuna
2 cups shredded cheddar cheese
1 cup panko bread crumbs
1/4 cup grated parmesan cheese
2-3 teaspoons olive oil

Steps:

  • Preheat oven to 400 degrees and lightly grease a 9x13 pan. Cook the egg noodles according to the package directions. Drain and add pasta to prepared pan.
  • Meanwhile, melt butter in a medium-sized saucepan over medium heat. Add in onion and saute 5 to 7 minutes, until softened. Stir in garlic and flour and cook 1 minute. Slowly pour in chicken broth and milk and bring to a simmer, stirring constantly.

1 large can chunk chicken or tuna
2 Tbsp dill pickle relish
1 small onion, finely diced
1/2 c celery, finely chopped
1/2 c bell pepper, finely diced (any color)
1/2 c black or green olives, chopped
3 hard boiled eggs
3 Tbsp salad dressing or mayo
2 small roma tomatoes, diced
2 c shredded lettuce

Steps:

  • 1. In medium bowl, combine chicken or tuna, pickle relish, onion, celery, bell pepper, olives,and tomatoes. . Stir gently to combine.
  • 2. Peel and roughly chop the hard boiled eggs into the mixture.
  • 3. Add the salad dressing and gently fold all ingredients together
  • 4. If serving immediately, fold in the lettuce; if not, fold it in just before serving.
  • 5. This is great served in a hollowed out tomato, on your favorite bread or wrapped in a lettuce leaf. Use your imagination.

1 (6 ounce) can solid white tuna
1/3 cup mayonnaise

1/4 cup apricot preserves

1/2 red apple, cored, chopped
1 cup dark raisin
1/8 teaspoon pepper

Steps:

  • Drain the chicken & albacore & shred them in a bowl.
  • Add the mayonnaise, mustard, preserves & pickle relish.
  • Quarter the unpeeled apple & get rid of the core.
  • Stand each quarter apple on its edge and slice each in half lengthwise, keeping the red halves.
  • Dice these red halves & add to chicken/albacore mix, along with the raisins.
  • Mix well & season with pepper to taste.

1 1/2 c chicken, cooked & cubed
1 can(s) solid white tuna, drained
1/2 lb macaroni (bow toes, shells, elbows, your choice)
1 can(s) cream of chicken soup, undiluted
1/3 can(s) evaporated milk (use soup can)
1 sm can(s) mushrooms
1 pkg mixed vegetables (i used a bag of broccoli, cauliflower, carrots, snow peas, & water chestnuts)
2 c cheese, shredded (cheddar or your favorite) divided
celery seed
onion, minced

Steps:

  • 1. Cook pasta to just before al dente. Drain.
  • 2. In a large bowl, combine pasta and the remaining ingredients, reserving 1/2 of the cheese. Mix.
  • 3. Spoon into a large casserole dish. Top with remaining cheese.
  • 4. Bake at 350 for about 20-30 minutes, or until top is bubbly and starting to get golden brown.
