1 onion, quartered
1 tart apple - peeled, cored, and quartered
1 pound chicken livers, rinsed and trimmed
¼ cup brandy
2 tablespoons heavy whipping cream
1 teaspoon lemon juice
1 ½ teaspoons salt
¼ teaspoon ground black pepper
1 tablespoon butter, melted

Steps:

  • Set aside 1/2 cup butter to soften slightly.
  • Place onion and apple in a food processor with the steel knife blade; process until coarsely chopped.
  • Melt 3 tablespoons butter in a large skillet over medium heat. Add onion and apple; cook and stir until lightly browned, 5 to 10 minutes. Return onion and apple to food processor.
  • Melt 5 tablespoons butter in the same skillet over high heat; cook chicken livers until browned and just done inside, about 5 minutes. Reduce heat to low and pour in brandy; allow to warm up without stirring. Carefully light the liquid; let flames subside.

1 cup milk

  • In a bowl, soak the livers in the milk for 2 hours. Drain well.
  • In a large saute pan or skillet, melt 4 tablespoons of the butter over medium-high heat. Add the onions and cook, stirring, until soft, about 3 minutes. Add the garlic and cook until fragrant, about 30 seconds. Add the chicken livers, 1 tablespoon of the peppercorns, the bay leaves, thyme, salt, and pepper and cook, stirring, until the livers are browned on the outside and still slightly pink on the inside, about 5 minutes. French pâté is in fact easier to make than my grandmother's chopped liver, which called for rendering chicken fat. Here, you just soften onions in butter, cook the livers, cool, purée and refrigerate. You don't have to bother with soaking the livers in milk, a step found in many recipes. Season aggressively: you want to taste the pepper, the coriander, the brandy and even the allspice and clove. Finally, cook the liver quickly, over pretty high heat. What you want is to brown the outside while keeping the inside pink. This, perhaps, is another major difference between pâté and chopped liver, in which the livers are almost always cooked to death.

6 tablespoons port wine
14 tablespoons butter (1 3/4 sticks)
2 shallots, chopped
1 garlic clove, crushed
1 teaspoon fresh thyme, chopped
1/4 cup heavy cream
kosher salt

Steps:

  • Rinse the livers and pat dry.
  • Cover with the Port, and chill for 2 hours.
  • Melt 3 tablespoons of the butter in a medium skillet.
  • Add the shallots, garlic, and thyme. Cook over medium low heat, stirring, until softened but not browned, about 3 or 4 minutes.
  • Remove the livers from the Port (reserve the Port) and add to the skillet. Continue to cook, without browning, until the livers just start to change color, another 3 to 4 minutes.
  • Add the Port and simmer for 2 minutes.
  • Place the liver mixture in a blender, and puree until smooth.
  • Add 3 more tablespoons of butter, and puree again until smooth.
  • Add the cream, and pulse until it is incorporated.
  • Season with salt and pepper.
  • Spoon into a 3 cup container (terrine, loaf pan, mason jar) and smooth the surface of the pate.
  • Chill for 1 hour, until it just starts to firm up.
  • Melt the remaining butter, and pour over the top of the pate, covering it completely.
  • Refrigerate overnight or up to a week.
  • Serve on toasted baguette slices or other crusty bread.

2 to 3 anchovy fillets
2 tablespoons capers
2 cloves garlic, smashed

1 baguette, cut in to 1/2-inch slices, toasted or grilled

Steps:

  • To make the onions: Coat a large saute pan with olive oil and add the onions. Season the onions with salt and bring the pan to a medium-high heat. Cover and sweat the onions for 15 to 20 minutes. Add the balsamic and cook for another 20 to 25 minutes or until the balsamic is syrupy. Use right away, or place in airtight jar and store in the refrigerator until ready to use.
  • To make the chicken liver pate: Coat a large saute pan with olive oil and add the anchovies, capers and garlic. Bring to medium heat and saute until the anchovies have dissolved.
  • Add the chicken livers, turn up the heat and saute for 3 to 5 minutes and cook until the livers are about 1/2 to 3/4 of the way done. Add the wine and cook for 3 to 4 minutes or until the wine has reduced by half, the mix should still be pretty soupy.

  • Preheat oven to 350°F.
  • Pulse onion and garlic in a food processor until finely chopped. Add mushrooms and pulse until finely chopped, scraping down bowl frequently, then stir in salt, pepper, and spices (this makes a duxelles).
  • Cook duxelles in a 12-inch nonstick skillet over moderate heat, stirring, until a shade darker and most of liquid mushrooms give off has evaporated, about 10 minutes. (Duxelles should not be dry in this recipe.)
  • Soak baguette pieces in milk in a large bowl until milk is absorbed. Stir in egg white, parsley, brandy, turkey, liver, and ham, then duxelles until combined well.

A pinch of nutmeg
Bread, toast or crackers, for serving

Steps:

  • In a skillet over medium heat, saute the onions in half of the olive oil until caramelized, about 30 minutes. Remove half of the onions from the skillet and set aside. Add the remaining olive oil and continue cooking over high heat until the onions are crispy and golden brown; add more olive oil if necessary. Drain on paper towels, season with salt and pepper and set aside for garnish.

I worked on making a recipe with readily available ingredients, but does not taste like it. 1 pound chicken livers, rinsed and trimmed
1 cup milk
½ cup unsalted butter
2 large onions, thinly sliced
2 cloves garlic, minced
1 teaspoon chopped fresh rosemary
1 teaspoon chopped fresh thyme
2 bay leaves
½ cup dry white wine
2 tablespoons drained capers
1 teaspoon salt
1 teaspoon ground black pepper

Steps:

  • Stir together the chicken livers and milk in a bowl. Set aside to soak for 2 hours, then drain and discard the milk.
  • Melt the butter in a large skillet over medium heat. Stir in the onion and garlic; cook and stir until the onions have softened and turned translucent, about 10 minutes. 1 pound chicken livers, trimmed
1 ¼ cups heavy whipping cream
1 onion, quartered
2 eggs

ground black pepper to taste

Steps:

  • Preheat oven to 390 degrees F (200 degrees C).
  • Mix flour and water together in a bowl until a thin paste forms, adding more water as needed.

1 onion, chopped
185 g butter (I know it seems ALOT, but it does give the pate the perfect consistency)
185 g chicken livers, cleaned and chopped
mixed herbs (a good 'shaking')
1/2 apricot brandy
salt
fresh ground black pepper, to taste
melted butter
bay leaf

Steps:

  • Melt butter and gently fry the chopped onion and chicken livers until softened and just cooked.
  • Spoon into blender.
  • Add herbs and seasoning and blend well.
  • Add the Apricot brandy to give a smooth and creamy texture.
  • Pour into suitable dishes (about 3-4 small bowls).
  • Smooth the top of pate in each bowl.
  • Gently press a bay leaf into the surface of each.
  • Top each bowl of pate with a little melted butter to prevent the air from discolouring.
  • Chill.

2 large shallots finely chopped
2 cloves of garlic finely chopped
2 tsp of fresh thyme finely chopped
1 lb chicken liver
1/3 cup brandy
1/3 cup heavy whipping cream
1.5 sticks (or ¾ cup) of butter (unsalted)
½ tsp salt
2 allspice berries ground
½ tsp ground ginger

Steps:

  • 1. Mix shallots, garlic, thyme, and a knob of butter in a pan at medium heat. Cook until the shallots and garlic are soft. Add chicken liver cut into 1 inch chunks and turn the heat to medium-high. Cook until livers are brown on the outside and still pink in the middle. Tip into food processor. 2. Add the brandy into the pan and reduce to about 2 tablespoons. Add to food processor. 3. Add cream, salt, allspice, and ginger into food processor. Blend until smooth. 4. Add about half of the butter cut up into the food processor and blend until smooth. 5. Run a mixture through a sieve to remove the larger chunks. Let stand to cool. 6. After 30 minutes, when the mix has cooled, melt the remaining butter and pour over the top. Put into the fridge to set. 7. Serve after the pate has set with your favorite crackers or bread.

250 g back bacon, derinded and chopped
4 cloves garlic, crushed
2 small onions, chopped
1 kg chicken liver, chopped
4 sprigs thyme
4 sprigs parsley
250 g button mushrooms, chopped
120 ml dry sherry
120 ml double cream
10 ml lemon juice

Steps:

  • Melt the butter in a large pan.
  • Add the bacon, garlic and onion and cook gently for 3 minutes.
