2 -3 sweet red peppers, seeded and roughly chopped (approx ¾ -1 lb)
2 -3 cloves garlic, peeled
3 tablespoons slivered almonds or 3 tablespoons ground almonds
1 -2 red chili pepper, roughly chopped,seeds removed
1/4 teaspoon cayenne pepper
1 medium onion, roughly chopped
1/2 cup chicken stock
1/2 cup evaporated milk
1 1/2 lbs chicken breasts or 1 1/2 lbs boneless chicken thighs, thinly sliced
5 tablespoons olive oil
1 medium zucchini, finely cubed
salt and pepper
1/2 cup torn basil leaves
3 tablespoons toasted pine nuts
12 ounces penne pasta
freshly grated parmesan cheese, to serve (optional)

Steps:

  • Put the first 6 ingredients in your blender or food processor and process into a paste/pulp.
  • Heat the oil in a large frying pan or Dutch oven, when hot enough pour the pepper paste in and on a medium high heat fry for 10 minutes.
  • Add the milk and chicken stock.
  • Then add the chicken and stir, add the zucchini a few minutes later.
  • Bring to the boil, lower the heat, cover and simmer for 10- 15 minutes or until the chicken is tender.
  • In the meantime cook the pasta according package instructions, drain when cooked, and put in a large warm dish.
  • Check the seasoning of the chicken dish, If you find the sauce too thick you can add some more chicken stock, it depends how much moisture the zucchini will release, add half of the basil, mix and put half of the chicken on top of the pasta, mix, then pour over the remaining.
  • Sprinkle the rest of the basil on top together with the pine nuts.
  • Serve.

2 tablespoons pepper-coriander root flavor paste, recipe follows
2 to 3 tablespoons Thai fish sauce
3 pounds chicken breasts or breasts and legs, chopped into 10 to 12 pieces
Hot and Sweet Dipping Sauce, recipe follows
2 teaspoons black peppercorns
5 to 6 large cloves garlic, coarsely chopped (about 2 tablespoons)
3 tablespoons coarsely chopped coriander roots
Pinch of salt
1 teaspoon Thai fish sauce
1/2 cup rice or cider vinegar
1/2 cup sugar
1 to 2 cloves garlic, finely minced
1/4 teaspoon salt
1 1/2 teaspoons dried red pepper flakes

Steps:

  • Place pepper-coriander root flavor paste in a large bowl and stir in the fish sauce. Place the chicken pieces in the marinade and turn to coat well. Let stand, covered, at room temperature for about 1 hour or in the refrigerator and for as long as 3 hours.
  • Heat a grill or preheat the broiler. If using a grill, place the chicken pieces 4 to 5 inches from the flame, bone side down, and grill until the bottom side is starting to brown, about 6 to 8 minutes. Then, turn over and cook until golden brown on the other side and the juices run clear when the meat is pierced.
  • If using a broiler, put the chicken pieces in a lightly oiled broiling pan, bone side up, place 4 to 6 inches from the broiler element, and cook for 8 to 10 minutes, or until the chicken is starting to brown. Turn the pieces over and broil for another 8 minutes, or until the juices run clear.
  • Transfer the chicken pieces to a platter and serve with dipping sauce and plenty of sticky rice.
  • Place the peppercorns in a mortar with the garlic and pound to a paste. Add the coriander roots and salt and pound to a paste. This will take 5 to 10 minutes; if you have a small blender or other food grinder that can produce a smooth paste, use it instead. Stir in the fish sauce. Will keep in a well-sealed glass jar for up to 4 days.
  • Yield: 2 to 3 tablespoons paste
  • Place the vinegar in a small non-reactive saucepan and heat to a boil. Add the sugar, stirring until it has completely dissolved, then lower the heat to medium-low and let simmer for 5 minutes.
  • Meanwhile, using a mortar and pestle or a bowl and the back of a spoon, pound or mash the garlic and salt to a smooth paste. Stir in the pepper flakes and blend well. Remove the vinegar mixture from the heat and stir in the garlic paste. Let cool to room temperature. Store sealed in a glass jar in the refrigerator for up to 2 days.

1 pound boneless, skinless chicken breast, cut across the grain in 1/4-inch thick slices
1 tablespoon egg white, lightly beaten
2 teaspoons cornstarch
1 1/2 teaspoons plus 1 tablespoon rice wine or dry sherry
1/2 teaspoon sugar
2 tablespoons hoisin sauce
1 teaspoon low sodium soy sauce
2 tablespoons peanut oil, rice bran oil or canola oil
1 tablespoon minced ginger
2 fat garlic cloves, minced
1 pound green peppers, with at least one of them a hot pepper such as an Anaheim
1/4 cup cashew pieces

Steps:

  • In a large bowl stir together the egg white, cornstarch, 1 1/2 teaspoons of the rice wine or sherry, salt to taste and 1 1/2 teaspoons water. When you can no longer see any cornstarch add the chicken and stir together until coated. Cover the bowl and place in the refrigerator for 30 minutes.
  • Combine the remaining rice wine or sherry, the hoisin sauce, soy sauce, and sugar in a small bowl and set it near your wok.
  • Fill a medium-size saucepan with water and bring to a boil. Add 1 tablespoon of the oil and turn the heat down so that the water is at a bare simmer. Carefully add the chicken to the water, stirring so that the pieces don't clump. Cook until the chicken turns opaque on the surface but is not cooked through, about 1 minute. Drain in a colander set over a bowl.
  • Heat a 14-inch flat-bottomed wok or 12-inch steel skillet over high heat until a drop of water evaporates within a second or two when added to the pan. Add the remaining oil by pouring it down the sides of the pan and swirling the pan, then add the garlic, ginger and chile and stir-fry for no more than 10 seconds. Add the peppers and stir-fry for 1 minute. Add the chicken, cashews and hoisin sauce mixture and salt to taste. Stir-fry for 1 to 2 minutes, until the chicken is cooked through, and serve with grains or noodles.

2 tablespoons vegetable oil
1 small onion, sliced thin
6 garlic cloves, sliced thin
1 (12 ounce) jar roasted red peppers, drained and chopped
2 teaspoons sugar
1 1/2 cups low sodium chicken broth
1/4 cup fresh basil, chopped
2 tablespoons unsalted butter

Steps:

  • Pat chicken dry with paper towels and season with salt and pepper. heat oil in large skillet over medium-high heat until just smoking. Cook chicken until golden brown, about 5 minutes per side. Transfer to plate.
  • Add onion to fat in skillet and cook until lightly browned, about 3 minutes. Stir in garlic and cook until fragrant, about 1 minute.
