6 chicken thighs, boneless and skinless (or 4 boneless, skinless breasts)
1 teaspoon seasoning salt
1/2 teaspoon garlic powder
1 -2 tablespoon olive oil
1/2-2/3 cup water (for sauteing chicken)
6 ounces cream cheese, cubed (if you like a thicker, richer sauce use 8 ounces cream cheese)
3/4 cup milk (adjust depending on how thin or thick a sauce you like)
1/2 teaspoon seasoning salt
1/2 teaspoon garlic powder
1/2 teaspoon ground pepper (red, white or black pepper)
1/2 teaspoon dried parsley flakes (to garnish) or 2 dashes chives (to garnish)

Steps:

  • Sprinkle chicken with seasoning salt and garlic powder, and set aside.

  • NOTE: I usually serve this dish with a side of steamed broccoli drizzled in heated olive oil (I season the heated olive oil with lime juice and garlic powder). YUMMY!

1 - large tomato
1/2 - finely diced sweet onion
1 - pot of coffee
1 tablespoon(s) vanilla
1 tablespoon(s) cinnamon
1/3 cup(s) molasses
1/4 cup(s) sweetener (your choice: sugar, honey, karo syrup, brown sugar, fructos, splenda, even maple syrup!)
1 - full pot of cooked rice
2 pound(s) (or more) of chicken (how many are you feeding?)

Steps:

  • Preheat oven to 375 degrees. Place chicken in a deep roasting pan (at least 2 1/2 inches)with a lid.
  • cover the meat with: vanilla, cinnimon, molasses, sweetner, onion, finely diced tomato, and enough coffee to cover the meat.
  • Cover and place in oven for two hours. (now's a good time to get your rice going)
  • Remove meat from "sauce", let cool, de-bone and skin.
  • Shred cooled meat with fork or fingers (if the meat is cooked well enough this should be easy)
  • mix shredded meat back into "sauce" mixture, and re-heat over stovetop or in microwave.
  • Serve over rice.

1 can (14 oz.) fat-free reduced-sodium chicken broth, divided
1/2 cup water
6 round buttery crackers, finely crushed (about 1/4 cup)
2 Tbsp. KRAFT Grated Parmesan Cheese
4 small boneless skinless chicken breasts (1 lb.)
2 tsp. oil
1/3 cup PHILADELPHIA Chive & Onion 1/3 Less Fat than Cream Cheese
3/4 lb. fresh asparagus spears, trimmed, steamed

Steps:

  • Cook rice in 1-1/4 cups broth and 1/2 cup water as directed on package.
