1 (2 to 3 pound) whole chicken, cut into pieces
1 tablespoon all-purpose flour
2 teaspoons salt
1 pinch ground white pepper
4 tablespoons vegetable oil
½ onion, thinly sliced
1 green bell pepper, thinly sliced
1 (8 ounce) can crushed pineapple with juice
2 teaspoons soy sauce
2 teaspoons brown sugar
2 teaspoons cornstarch
2 teaspoons chicken stock

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix flour, salt and pepper in a resealable plastic bag. One at a time, put chicken pieces in bag, seal and shake to coat. In a large skillet, heat oil over medium heat and saute chicken pieces until brown on all sides. 1 teaspoon salt
2 tablespoons vegetable oil
1 large onion, chopped (1 1/4 cups)
3 tablespoons finely chopped peeled fresh ginger
1 tablespoon finely chopped garlic (2 cloves)
2 (3-inch) cinnamon sticks
1 Turkish or 1/2 California bay leaf
1 tablespoon curry powder (preferably Madras)
2 teaspoons all-purpose flour
2 teaspoons sugar (optional)
1 (13 1/2- to 15-oz) can unsweetened coconut milk (not low-fat)
Accompaniments: rice; toasted coconut; 1/2-inch cubes fresh pineapple; lime wedges; mango chutney; chopped salted roasted cashews or peanuts; chopped fresh cilantro leaves

Steps:

  • Pat chicken dry and sprinkle with 1/2 teaspoon salt.
  • Heat oil in a 6- to 8-quart heavy pot over moderately high heat until hot but not smoking, then brown chicken in batches (without crowding), turning over occasionally, 8 to 10 minutes per batch. Transfer to a plate as cooked, reserving fat in pot.
  • Add onion, ginger, garlic, cinnamon sticks, and bay leaf to fat in pot and cook, stirring occasionally, until onion is browned, about 5 minutes. 2 cups Stove Top stuffing mix
1 green pepper, chopped
1 (8 1/4 ounce) can crushed pineapple in juice, divided
4 boneless skinless chicken breasts, pounded 1 ' 4-inch thick
2 tablespoons brown sugar
2 tablespoons vinegar
1/4 teaspoon ginger
