8 ounces uncooked wide egg noodles
8 ounces cream cheese, softened at room temperature
1 cup cottage cheese, at room temperature
½ cup sour cream, at room temperature
3 tablespoons salted butter, melted
1 tablespoon olive oil
1 ½ lbs. ground beef
½ cup diced onion
½ of a medium green bell pepper, seeded and diced
1 (14.5 oz) can diced tomatoes, drained
¾ cup condensed tomato soup, not diluted
1 teaspoon Worcestershire sauce
1 cup shredded cheddar or mozzarella cheese
Optional garnish: chopped fresh parsley, basil, or other herbs

Steps:

  • Preheat oven to 350°F (180°C). Grease a 9 x 13-inch baking dish; set aside.
  • Cook noodles in a pot of salted boiling water according to package instructions until just barely al dente, about 5-6 minutes. Drain and set aside.

1 pound Ground beef, preferably an 85%/15% mix
2 medium Onions, any variety, peeled and chopped
1 teaspoon Salt
1/2 teaspoon Black pepper
1/2-1 teaspoon Crushed red pepper flakes, optional
2 large Potatoes, any variety, peeled and bite-sized cubed
1 large Green bell pepper, bite-sized cubed
1 14.5 ounce Canned diced tomatoes, drained
1 cup Liquid (I used chicken bone broth, but you can use beef bone broth or simply broth or water.)
1 teaspoon Corn starch (You can substitute with flour, arrowroot, or tapioca. )
1 cup Cheese, grated (I used Monterey Jack, but other options include cheddar, provolone, any cheese that melts well.)

Steps:

  • Preheat the oven to 350°F.
  • Add the ground beef to a skillet over medium heat. Cook until nicely browned. Approximately 3-4 minutes.
  • Add onions to the skillet along with salt and pepper and red pepper flakes, if using. Allow onions to soften. Approximately 1-2 minutes.
  • Add potatoes to the skillet and stir well. Allow to cook so the potatoes begin to soften. Approximately 3-4 minutes.
  • Add peppers and drained tomatoes to skillet and stir well.
  • Stir cornstarch into liquid and add liquid to skillet, stir well, and then turn off the heat. If your skillet is not oven-proof, transfer the contents of the skillet to an oven-proof baking dish. (See video.)
  • Top the casserole with cheese and place the skillet (or oven-proof baking dish) on the middle rack of the oven.
  • Bake for approximately 15-20 minutes until the cheese is bubbly and a golden brown.
  • Remove the skillet (or oven-proof baking dish) to a heat-proof surface and allow to cool for about 5 minutes before serving.
  • Well wrapped, the hamburger casserole will stay fresh in the fridge for 3-4 days. To reheat, cover with aluminum foil and place in a 350°F oven for approximately 15 minutes or until heated through.

2 cups cubed fully cooked ham
2 cups diced cooked chicken

1 cup sour cream
