- Preheat oven to 400 degrees F.
- Wrap garlic heads in foil and place on small rimmed baking pan. Transfer to oven and cook 1 hour or until garlic is dark golden brown and very soft. Remove from oven and let stand for 5 minutes or until cool enough to touch. Squeeze garlic cloves from their skin into a small bowl.

- First, add flour into a large mixing bowl with yeast, salt,sugar, and oil. Add 1 cup (240 ml) of water and mix thoroughly with a wooden or plastic spoon to form a dough.
- Place dough in a bowl and cover with saran wrap. Let sit for 30-45 min.
- Preheat the oven to 425°F.
- Cut chicken breasts into halves (horizontally). Heat a pan on medium heat and cook chicken on a stove with 1 tbsp of oil but no seasonings for 6 minutes on both sides, or until all the pink is cooked out.

I experimented in the kitchen to create a pizza my husband loves. It doesn't use your traditional tomato based sauce. Instead, it uses a jar of alfredo sauce. We like to use garlic alfredo sauce. The garlic really makes the pizza. It may seem like a lot, but trust me, it's good. Buying already minced fresh garlic saves time and hastle. I prefer to use the pizza pans with holes in the bottom or else the crust can get a little soggy. The crust recipe uses a breadmaker but any pizza crust recipe will work. Using my breadmaker for the crust saves a lot of time- I used to make this weekly. We love it!

- 1. For the crust: In a bowl, measure 2 cups warm water ( not hot) 110 - 115 F. Dissolve the yeast in water and add the sugar. Set aside. I use my kitchenaid mixer with dough hook. If you don't have, mix in a large bowl by hand. Put the flour, oil and salt in the bowl, attach dough hook, blend the flour, salt and oil; add the yeast water, mix until forms a ball.
- 2. Knead until smooth and elastic, add more flour if dough is sticky , this should not be dry but firm until a ball forms. Let rise in a large bowl covered with a wet towel.. until doubled in size in warm spot.. away from draft.
- 3. In a skillet, saute seasoned chicken in olive oil till cooked through. Set aside.
- 4. Mix ricotta with 1/2 cup parmesan cheese, tablespoon parsley, salt and pepper. Set aside.
- 5. Mince the garlic, add to the butter and oil. Microwave for about a minute; just until butter is melted and garlic starts releasing flavor. Set aside.
- 6. When the dough has risen. Cut in half unless halving the recipe. I make the full recipe and make 2 pizza's. Grease round pizza pan or jelly roll pan. I used both, and I add corn meal for added crunchiness. Up to you.
- 7. Spread out dough with oiled fingers. With a pastry brush; evenly spread garlic butter over the crust. Next season with salt, pepper, garlic powder, parsley, basil, red pepper flakes ( optional)
- 8. Next parmesan cheese. Then dollops of ricotta mixture if using ( it really is good). Then layer chicken evenly. Next the mozzarella. Vegetables and more seasonings if desired. **** This picture is with chicken and cheeses and onion only.

- Dough n a large Bosch mixer (if you have a Kitchen Aid, divide the recipe in half), combine the flour, salt, yeast, sugar, and dough enhancer. In a glass liquid measuring bowl, warm the water in the microwave for 2 minutes. (I did this by hand since I don't have a mixer. Little extra work, but totally do-able). Add the water and oil to the flour mixture a few cups at a time. When combined, let the dough mix for 2 minutes. Dough should be elastic and not stick to your fingers. Add more flour if too sticky, more water if too dry. Let the mixer knead the dough for 8 minutes. Preheat oven to 500ºF. Place a pizza stone (best for a crispy crust) in the oven while it is heating up. Or use a greased baking sheet. Shape dough into a large circle, then cut it into four sections with a knife. Lightly oil counter top and roll out each pizza crust with a rolling pin. Fold over the edges and press down to form a crust. With a fork, pierce pizza dough every inch or two to reduce the number of bubbles in the crust. Sprinkle cornmeal or flour on the pizza pans and place pizza dough on pans by folding over half the dough on your forearm and then lifting dough onto pizza pan. Bake each pizza for 4 minutes at 500ºF. You can freeze pizza crust (when cooled) or continue with toppings. Remove hot crust from oven and top with ½ cup cheese first (this will keep the frozen pizza from getting soggy). Prepare pizza sauce (recipe follows) and pour sauce on top of cheese. - Preheat oven to 375 degrees Fahrenheit.
- Drizzle a baking sheet with a little olive oil and place the pizza dough on top to rest before working. (Trader Joe's pizza dough requires 30 minutes sitting at room temperature, so I usually do that first).
- Lay out a large square of foil and place the garlic cloves on top (be sure you leave the peel on!). Drizzle with 1 tablespoon olive oil and sprinkle with a couple of pinches of kosher salt. Fold the foil into a sealed packet and place in the oven (put it on a baking sheet if you're worried about leaking). Roast the garlic until soft, golden, and fragrant, about 25 minutes. Remove from oven and set aside to cool. Once cool enough to handle, peel the cloves and discard the skins. Increase oven heat to 450 degrees Fahrenheit to prepare it for baking the pizza.
- Add 8 of the peeled garlic cloves to a small bowl. Smash with a fork. Add the ricotta, 2 teaspoons olive oil, basil, honey, oregano, 1/2 teaspoon kosher salt, and pepper. Mix well.
- If using chicken, heat the outdoor grill or an indoor grill pan on medium-high. Rub the chicken with 1 tablespoon olive oil and sprinkle with salt and pepper. Cook, flipping occasionally, until cooked through (we always check the internal temperature, which should register 165 degrees Fahrenheit). Set aside to cool. Once cool, cut into chunks.
- Stretch the pizza crust into a large (approx. 14-inch) round and place on greased cookie sheet or a pizza stone. If creating one meatless version and one chicken version, split the dough in half and stretch each into smaller rounds, approximately 8 inches or so, and place each on an olive-oil-greased cookie sheet.
- Top the crust(s) with tablespoon-sized mounts of ricotta, as evenly spaced as possible (but it doesn't have to be perfect!) Scatter with spinach and remaining garlic cloves. Top with cooked chicken chunks if using (you may only want to use half of the chicken if you're making two smaller pizzas). Scatter mozzarella cheese over the top(s).
- Bake at 450 degrees Fahrenheit until the crust is crisp and golden and the cheese is melted and bubbling, 9-10 minutes. Remove from oven and allow to cool for a couple of minutes before slicing into wedges with a pizza cutter and serving.
