EASY ENCHILADA CASSEROLE WITH DORITOS

Easy Enchilada Casserole With Doritos image

I saw this recipe on Good Morning America and it sounded so easy and tasty. And it was! The first time I made it my husband ate almost 1/3 of it in one sitting. Even my toddler son enjoys it. This would be great for those informal group get-togethers also. Add some chiles to give it a bit more zip or a pound of browned ground beef or some chicken for another twist.

Categories     Chicken

Time 30m

Yield 4 serving(s)

Number Of Ingredients 6

1 (8 ounce) carton sour cream
1 (4 1/2 ounce) can diced green chilies
1 (10 1/2 ounce) can cream of chicken soup
1 (10 ounce) can chicken
1 (13 ounce) bag plain Doritos, slightly crushed
2 cups Mexican blend cheese, shredded

Steps:

  • Mix first four ingredients and heat in a saucepan.
  • Spray a 9X9 baking dish.
  • Place a layer of Doritos in the bottom.
  • Pour 1/2 of heated mixture on top, sprinkle with 1/2 of the grated cheese.
  • Repeat.
  • Heat in 350 degree oven about 20-30 minutes until hot and bubbly.
  • Can be doubled and use a 9X13 pan.
  • You won't need to use all the Doritos, but that way you can munch while you cook.

Tips:

  • Use fresh ingredients. Fresh chicken, vegetables, and tortillas will make a big difference in the flavor of your casserole.
  • Don't overcook the chicken. Overcooked chicken will be dry and tough. Cook it until it is just cooked through, about 10 minutes per side.
  • Use a variety of cheeses. A blend of cheeses, such as cheddar, Monterey Jack, and pepper Jack, will give your casserole a more complex flavor.
  • Don't be afraid to experiment. You can add different vegetables, spices, or sauces to your casserole to create your own unique dish.
  • Make sure to serve your casserole hot. This dish is best enjoyed when it is fresh out of the oven.

Conclusion:

Chicken Dorito Enchilada Casserole is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover chicken. With its creamy, cheesy, and flavorful filling, this casserole is sure to be a hit with your family and friends. So next time you are looking for a quick and easy dinner idea, give Chicken Dorito Enchilada Casserole a try. You won't be disappointed!
