Tips:

  • Mise en Place: Before you start cooking, make sure you have all of your ingredients and equipment ready. This will help you stay organized and avoid scrambling.
  • Choose the Right Tortillas: Corn tortillas are the traditional choice for this dish, but you can also use flour tortillas if you prefer. If you are using corn tortillas, be sure to warm them up before adding them to the soup. This will help prevent them from breaking.
  • Don't Overcook the Chicken: Chicken is a lean protein, so it's important not to overcook it. Otherwise, it will become dry and tough. Cook the chicken until it is just cooked through, or until it reaches an internal temperature of 165 degrees Fahrenheit.
  • Use a Good Quality Broth: The broth is the base of this soup, so it's important to use a good quality broth. You can use chicken broth, vegetable broth, or a combination of the two. If you are using store-bought broth, be sure to read the label carefully and choose one that is low in sodium.
  • Add Vegetables: Vegetables add flavor, texture, and nutrients to this soup. Feel free to add any vegetables that you like, such as carrots, celery, onions, potatoes, or corn. You can also add greens, such as spinach or kale, at the end of the cooking time.
  • Season to Taste: Once the soup is finished cooking, season it to taste with salt, pepper, and other seasonings. You can also add a squeeze of lime juice or a dollop of sour cream to brighten up the flavors.

Conclusion:

Chicken, chorizo, and tortilla stoup is a delicious and hearty soup that is perfect for a cold winter day. It is also a great way to use up leftover chicken and chorizo. This soup is easy to make and can be tailored to your own taste preferences. So next time you're looking for a quick and easy meal, give this soup a try!
