BEST WHITE CHICKEN CHILI

Change things up this winter by making chili with chicken instead of beef. For a milder version, you can substitute a green bell pepper for the jalapenos. Garnish with cheese and cilantro if desired.

Time 1h20m

Yield 8 serving(s)

Number Of Ingredients 17

1 1/2 lbs boneless skinless chicken breasts (3 large breasts)
2 tablespoons olive oil
2 onions, chopped
1 chipotle chile in adobo, chopped (plus a little of the sauce)
2 tablespoons chili powder
1 tablespoon cumin
1/2 teaspoon cayenne pepper
2 teaspoons salt
3 garlic cloves, minced
1 red bell pepper, chopped
1 green bell pepper, chopped
1 yellow bell pepper, chopped
56 ounces diced tomatoes (i like the fire roasted kind)
15 ounces tomato sauce
2 cups chicken stock
15 ounces chili beans, drained and rinsed
15 ounces kidney beans, drained and rinsed

Steps:

  • cook chicken- boil or bake- cool and shred or chop.
  • heat oil in a dutch oven or heavy pot and saute for 5 minutes.
  • add garlic, peppers and spices, saute 5 more minutes.
  • add tomatoes and stock, simmer covered for 20 minutes.
  • add chicken and beans, simmer uncovered for 30 minutes, add liquid to your liking or simmer until thickened to your liking.
  • i serve with bread or corn bread for dipping, sour cream, cheese and fritos are good too.

Tips:

  • Use fresh ingredients: The fresher the ingredients, the better the chili will taste. This is especially true for the chicken, tomatoes, and peppers.
  • Brown the chicken before adding it to the chili: This will help to develop flavor and prevent the chicken from becoming dry.
  • Use a variety of beans: Different beans have different flavors and textures, so using a variety will add depth and complexity to the chili.
  • Don't be afraid to experiment with different spices: Chili is a great dish to experiment with different spices, so feel free to add your own favorites. Some good options include cumin, chili powder, paprika, and cayenne pepper.
  • Let the chili simmer for a long time: The longer the chili simmers, the more time the flavors have to develop. So, don't be afraid to let it simmer for several hours, or even overnight.

Conclusion:

Chicken chili is a delicious and versatile dish that can be enjoyed by people of all ages. It's perfect for a quick and easy weeknight meal, or for a party or potluck. With a few simple ingredients and a little bit of time, you can make a delicious pot of chicken chili that everyone will love.
