2-3 chicken breasts (boneless, skinless, cooked and cubed)
1 cup broccoli (steamed and coarsely chopped)
1 lb. penne pasta
8 Tbsp. butter
16 oz. heavy whipping cream
1 cup + ½ cup Parmesan cheese (shredded, divided)
2 egg yolks

Steps:

  • In a saucepan over medium heat, melt the butter and whisk in the heavy cream.
  • Whisk in egg yolk and 1 cup cheese.
  • Simmer for 5 minutes, then remove from heat and set aside.
  • In a large pot, prepare pasta al dente as directed on the package.*
  • Drain and put back in pot.
  • Pour ½ of sauce over pasta and toss to coat.
  • Gently mix in chicken and broccoli. Stir in the rest of the sauce.
  • Dump into a 9x13 pan and top with remaining Parmesan.
  • Cover with two layers of tin foil.
  • Freeze.
  • Remove from freezer. Thaw.

½ cup sour cream

4 boneless, skinless chicken breasts
Kosher salt and freshly ground black pepper
1 medium head broccoli, cut into small florets
2 cups cooked white rice
One 10-ounce can condensed cream of chicken soup
1 cup sour cream
1/2 cup mayonnaise
1 tablespoon lemon juice
10 ounces Cheddar, grated (about 2 1/2 cups)

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-13-by-2-inch baking dish with nonstick cooking spray or butter.
  • Place the chicken in a large pot with water to cover. Add some salt, bring to a boil, then reduce the heat to a low simmer and cook the chicken until tender, about 45 minutes. Drain the chicken, cover, and refrigerate until cool, or up to 24 hours. Shred.
  • Meanwhile, bring a medium pot of generously salted water to a boil. Add the broccoli florets, and boil until crisp-tender, 2 to 3 minutes.

4 cups cooked chicken, diced
1 (10 3/4 ounce) can condensed cream of chicken soup
1/2 cup light mayonnaise
1 (4 ounce) can mushroom stems and pieces, drained
1/4 teaspoon curry powder
1 pinch grated black pepper
3/4 cup parmesan cheese, freshly grated

Steps:

  • Thaw broccoli flowerets and spread in a prepared 13x9 inch baking dish.
