Kosher salt and freshly ground black pepper
All-purpose flour
1/2 cup good olive oil
8 whole garlic cloves
1 1/2 pounds assorted wild mushrooms, such as porcini and cremini, stems removed and (1 1/2-inch) diced
8 sprigs fresh thyme, tied with kitchen string
1/4 cup dry sherry
1 tablespoon minced garlic (3 cloves)
2 cups white wine, such as Pinot Grigio
2 cups good chicken stock, preferably homemade
3 tablespoons unsalted butter, at room temperature

Steps:

  • Preheat the oven to 325 degrees.

1 ounce dried wild mushrooms, thoroughly rinsed under running water,and drained (such as cepes, morels, etc, all one kind or a mix)
1/2 lb fresh cultivated mushroom, wiped clean with damp paper towel (button)
5 tablespoons unsalted butter
1/4 cup finely-chopped shallot (or 3 green onions, finely-chopped, plus 1 T minced garlic)
salt and pepper, to taste
1/3 cup medium port wine
1/3 cup heavy cream
6 boneless skinless chicken breast halves

1/2 pound fresh mushrooms
4 tablespoons sweet butter
1/4 cup finely chopped shallots
salt and freshly ground black pepper to taste
1/3 cup medium port wine
1/3 cup heavy cream
6 boneless skinless chicken breasts
parsley, chopped, (optional)

Steps:

  • Bring the chicken stock to a boil in a small saucepan. Pour it over the dried mushrooms in a small bowl and let stand for 2 hours. Meanwhile, trim stems from the fresh mushrooms and save stems for another use, or discard. Wipe mushroom caps with a damp paper towel and slice thin. Melt the butter in a skillet. 2 whole skinless boneless chicken breasts (about 1 1/2 pounds), halved
2 tablespoons olive oil
For creamed mushrooms
1 large shallot, minced (about 1/4 cup)
1 tablespoon unsalted butter
1/2 pound fresh shiitake mushrooms, stems discarded and caps chopped coarse
1/2 cup dry white wine
1 tablespoon white-wine vinegar
1 teaspoon chopped fresh rosemary leaves or a rounded 1/4 teaspoon dried rosemary, crumbled
1/2 cup heavy cream

  • Prepare coating:
  • Preheat oven to 450°F.
  • In a shallow baking pan drizzle oil over shiitakes and toss to coat. Roast mushrooms, stirring once or twice, 12 to 15 minutes, or until golden. Keep oven at 450°F.

Stir in wine, vinegar, and rosemary and boil until all liquid is evaporated. Add cream and simmer, stirring, until thickened slightly, about 1 minute. Season mixture with salt and pepper.
