DELI CHICKEN

An excellent spice rub for chicken - for those who like things with a kick. I have cooked this both on a rotissiere and in the oven - the rotissiere creates a crisper skin, much like you would get in the neighbourhood deli, but the oven roasted tastes just as good.

SPIT-ROASTED CHICKENS

Spit-Roasted Chickens image

Spit-roasting chickens on the grill ensures an evenly juicy bird.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Chicken

Number Of Ingredients 4

5 two-and-one-half-pound fryer chickens
Olive oil
Salt and freshly ground pepper
Quince Barbecue Sauce

Steps:

  • Heat a grill until the coals are ninety percent white and no flame remains.
  • Wash chickens inside and out under cold running water; pat dry with paper towels. Trim and discard excess fat. Rub with olive oil, and season inside and out with salt and pepper. Tie the legs together, and thread the chickens onto the spit through the cavities.
  • Place spit above coals, and begin rotating. Grill chickens until legs move loosely at joints and juices run clear when pierced with a fork, 50 to 60 minutes. During the final 15 minutes, baste with barbecue sauce. Remove from grill. Let stand 15 minutes, and carve.

Tips:

  • Choose high-quality chicken: Look for a chicken that is plump and has a yellow tint to its skin. Avoid chickens that are pale or have any bruises.
  • Brine the chicken: Brining the chicken helps to keep it moist and flavorful. To brine the chicken, simply dissolve 1/4 cup of salt in 1 gallon of water and then submerge the chicken in the brine for 1-2 hours.
  • Use a flavorful marinade: The marinade is what will give your chicken its flavor. Be sure to use a marinade that you like the taste of. Some popular marinade ingredients include olive oil, lemon juice, garlic, and herbs.
  • Cook the chicken over indirect heat: This will help to prevent the chicken from drying out. If you are using a charcoal grill, place the coals on one side of the grill and cook the chicken on the other side. If you are using a gas grill, turn one burner on high and the other burner on low and cook the chicken over the low burner.
  • Baste the chicken regularly: Basting the chicken helps to keep it moist and flavorful. Use a basting brush to apply the marinade or melted butter to the chicken every 15-20 minutes.
  • Cook the chicken to an internal temperature of 165 degrees Fahrenheit: Use a meat thermometer to check the internal temperature of the chicken. Once the chicken has reached 165 degrees Fahrenheit, it is safe to remove it from the grill.

Conclusion:

Rotisserie chicken is a delicious and easy-to-make meal. By following these tips, you can make the best rotisserie chicken at home. Whether you are using a charcoal grill, a gas grill, or an oven, you can create a flavorful and juicy rotisserie chicken that your family and friends will love.
