Categories     main-dish

Time 20m

Yield 4 servings

Number Of Ingredients 8

Kosher salt
1 1/2 pounds ripe on-the-vine tomatoes, finely chopped
1/4 cup good-quality olive oil, plus more for drizzling
4 cloves garlic, very thinly sliced
1/4 teaspoon crushed red pepper flakes
12 ounces angel hair pasta
1 cup freshly grated Parmesan cheese, plus more for serving
1/4 cup sliced basil

Steps:

  • Bring a large pot of salted water to a boil.
  • Put the tomatoes in a large bowl. Heat the olive oil and garlic in a small saucepan over medium heat until the garlic is translucent, but not at all browned, 1 to 2 minutes. Stir in the crushed red pepper flakes, then pour the garlic oil over the tomatoes. Add 1 teaspoon salt and toss to coat.
  • Cook the pasta according to package directions. Transfer the pasta directly from the boiling water to the bowl with the tomatoes using a pasta fork or tongs. Sprinkle in the Parmesan and some of the basil and toss to coat; let stand 5 minutes so that the sauce absorbs slightly. Top with the remaining basil and a little additional olive oil and serve with additional Parmesan.

Tips:

  • Use flavorful tomatoes: Vine-ripened tomatoes or San Marzano tomatoes are best for this dish, as they have a sweeter, more intense flavor.
  • Don't overcrowd the pan: When cooking the chicken, make sure to give it enough space so that it can brown evenly. If you overcrowd the pan, the chicken will steam instead of brown.
  • Cook the pasta al dente: Angel hair pasta cooks very quickly, so be careful not to overcook it. Cook it according to the package directions, or until it is just tender but still has a slight bite to it.
  • Add the pasta to the sauce: Once the pasta is cooked, add it to the sauce and stir to combine. This will help the pasta absorb the flavors of the sauce.
  • Garnish with fresh herbs: Before serving, garnish the dish with fresh herbs such as basil, parsley, or oregano. This will add a pop of color and flavor to the dish.

Conclusion:

This chicken and tomato angel hair pasta is a quick and easy weeknight meal that is sure to please the whole family. The combination of juicy chicken, flavorful tomatoes, and delicate angel hair pasta is simply irresistible. With a few simple tips, you can make this dish even more delicious.
