24 uncooked large shrimp, unpeeled, deveined (thawed if frozen)
12 chicken tenders
1/3 cup fresh lemon juice
2 tablespoons finely grated lemon peel
2 garlic cloves, minced
2/3 cup olive oil

Steps:

  • Thread 4 shrimp on each of 6 metal skewers; place on rimmed baking sheet. Loosely thread 2 chicken tenders on each of 6 metal skewers; place on another rimmed baking sheet. Whisk lemon juice, lemon peel, and garlic in medium bowl; slowly whisk in oil. Season marinade with salt and pepper. Pour marinade over skewers, dividing equally.
  • Prepare barbecue (medium-high heat). Arrange lettuces on large platter. Grill chicken until cooked through, about 5 minutes per side. Grill shrimp until pink on outside and opaque in center, about 4 minutes per side. Remove kebabs from grill; place atop lettuce. Serve with Tomato-Avocado Salsa and Chipotle Aioli .

Delicious skewers of shrimp, chicken, pineapple, zucchini, bell peppers, cherry tomatoes, and red onion coated in a sweet and tangy honey sesame glaze.

1/3 cup honey
1/3 cup soy sauce
2 tablespoons hoisin sauce
2 tablespoons sesame oil
1 medium shallot, chopped
2 garlic cloves, chopped
2 teaspoons ginger, freshly grated
24 extra-large shrimp ((U21-25 count), peeled and deveined, tails left intact)
1 ½ pounds boneless, skinless chicken breasts (, cut into 24 1 ½-inch cubes)
24 1-inch cubes of pineapple
24 zucchini slices, ½-inch thick
2 red bell peppers (, cut into 24 1-inch squares)
24 3-layer sections of red onion wedges
24 cherry tomatoes

Steps:

  • Puree all ingredients in a blender until smooth. Season marinade with salt and black pepper to taste. Makes about 1 ¼ cups. Set aside. (Can be made 3 days ahead. Cover and refrigerate.)
  • On each skewer, thread 2 shrimp, 2 chicken cubes, 2 pineapple cubes, 2 zucchini slices, 2 bell pepper squares, 2 cherry tomatoes, and 2 red onion wedges in any pattern you like.
  • Place skewers on a large, rimmed baking sheet. Pour a third of the glaze over the skewers. (Can be prepped one day ahead. Cover and chill. Bring to room temperature before grilling.)
  • Coat grill grates with nonstick spray or vegetable oil and preheat grill over medium.
  • Grill skewers 4 minutes on one side then flip. Baste with another third of the glaze, keeping the remaining glaze separate for when serving.
  • Continue grilling skewers until shrimp are opaque in the center, and chicken is no longer pink, another 3-4 minutes. Let skewers rest a few minutes before serving.
  • Arrange skewers on platter. Garnish with sesame seeds, fresh herbs and lime wedges, if desired. Serve with remaining glaze. Enjoy!

thumb-sized piece ginger , grated
1 large garlic clove , grated
1 tsp honey
1½ tsp soy sauce
1 tsp sesame oil
½ lime , juiced
1 tbsp sesame seeds
1 skinless chicken breast , cut into 10 pieces
10 raw king prawns
1 broccoli head , cut into 20 florets
20 cocktail skewers

Steps:

  • Combine the ginger, garlic, honey, soy sauce, sesame oil, lime juice and sesame seeds. Divide between two bowls, then add the chicken pieces to one and the prawns to the other. Toss both mixtures well, then leave to marinate in the fridge for 15 mins.
  • Cook the chicken in a frying pan over a medium-high heat for 3 mins, then push to one side and add the prawns to the other side of the pan. Cook for 2 mins until the prawns are pink and the chicken is cooked through (use two separate pans if anyone you're cooking for has an allergy or is a pescatarian). Put the broccoli in a microwaveable bowl with a splash of water, then cover and cook on high for 5 mins.
  • Thread half of the skewers with chicken and broccoli and the other half with prawns and broccoli.

500 g large green shrimp
1 (420 g) can apricot halves (reserve juice)
1 (420 g) can pineapple rings (reserve juice)
2 teaspoons freshly grated ginger
2 tablespoons olive oil
salt and pepper
2 teaspoons cornflour
1 tablespoon water
1 teaspoon grated fresh ginger (extra)
2 spring onions, finely sliced

Steps:

  • Cut chicken into large bitesize pieces.
  • Peel and devein the prawns.
  • Drain apricot halves and pineapple slices, reserving the juice.
  • Cut the pineapple slices into 4.
  • Thread the prepared chicken, prawns and fruit alternately onto metal skewers.
  • Combine 1 cup reserved pineapple juice with grated ginger, olive oil, salt and pepper.
  • Pour mixture over kebabs and marinate 30 minutes.
