1 loaf French bread, cut in half and split open
1 tablespoon vegetable oil
1/2 lb chicken breast, skinless, boneless, cut into strips
1 small bell peppers, green or 1 small red pepper, cut into 2-inch strips
1 medium onion, sliced
1 (15 ounce) can tomato sauce (I used Hunts sauce Basil, Garlic & Oregano 8 oz. can)
1 package of sliced mozzarella cheese

Steps:

  • Preheat oven to 350 degrees.
  • Meanwhile, heat oil in skillet.
  • Add chicken and cook until browned, stirring often.
  • Remove chicken.
  • Add pepper and onion and cook until tender.
  • Return chicken to skillet and heat through.
  • Spoon chicken mixture on bottom bread half.
  • Then cover with tomato sauce.
  • Finally top each half with mozz. cheese.
  • Place in the oven and bake for about 10 minutes or until cheese is melted.
  • Top with remaining bread half if desired.
  • Cut into quarters.
  • Makes 4 sandwiches.

1 teaspoon chipotle steak seasoning
2 cups shredded melting cheese blend
2 tablespoons olive oil
1 white onion, chopped
1 1/2 pounds shaved chicken breast
1 to 2 teaspoons Chicken Seasoning Blend
1/4 cup chicken stock, beer or water
4 hoagie rolls, split
Mayonnaise
Cherry pepper relish
2 teaspoons chicken seasoning
1 teaspoon kosher salt
1/2 teaspoon garlic salt
Freshly ground black pepper

Steps:

  • For the cheese sauce: Combine 8 ounces of the beer, the Chicken Seasoning Blend and the chipotle steak seasoning in a saucepan over medium heat and bring to a simmer. Gradually whisk in the cheese; cook just until the cheese is melted, adding more beer if the sauce is too thick. Keep warm.
  • For the chicken: Heat a cast-iron griddle over medium-high heat. Add 1 tablespoon of the olive oil and the onions and cook for 3 to 5 minutes. I have made many different meatloaf recipes, but this is the one I will make from now on. This recipe is from Kate Gosselin from " John and Kate plus Eight" . This is a clever way to sneak vegetables onto picky eaters plates. It seems like alot of vegetables, but if you use the food processor on pulse to shred the vegetables finely without pureeing them, they cook down to nothing. What you have is a moist, flavorful meatloaf. I have one of the world's most pickiest eaters and even he ate it and said it was very good.

2 lbs organic lean ground beef
2 eggs
3/4 cup celery, finely chopped
3/4 cup onion, finely chopped
