Heaven on a plate! Had these for dinner last night and we're wishing there had been leftovers. Served with portobello mushroom risotto and crusty bread for mopping up the sauce. Pure comfort food!

Tips:
- Choose the right cut of beef: Short ribs are the best cut of beef for braising. They have a good amount of fat, which helps keep them moist during the long cooking process.
- Brown the short ribs before braising: Browning the short ribs in a hot skillet before braising them helps develop flavor and color.
- Use a good quality Chianti wine: The wine you use in the braising liquid will have a big impact on the final flavor of the dish. Choose a Chianti wine that you enjoy drinking.
- Braise the short ribs for at least 2 hours: The longer you braise the short ribs, the more tender they will become. Braise them for at least 2 hours, or up to 4 hours.
- Serve the short ribs with mashed potatoes or rice: Mashed potatoes or rice are the perfect side dishes for Chianti braised short ribs. They help soak up the delicious sauce.
Conclusion:
Chianti braised short ribs are a delicious and easy to make dish that is perfect for a special occasion or a weeknight meal. The short ribs are braised in a flavorful Chianti wine sauce until they are fall-off-the-bone tender. Serve them with mashed potatoes or rice and a glass of Chianti wine for a truly memorable meal.
