Time 1h

Yield About 24 cookies

Number Of Ingredients 10

1 stick (8 tablespoons) unsalted butter, at room temperature
3/4 cup packed dark brown sugar
1/2 cup maple syrup
1 large egg, at room temperature
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1 3/4 teaspoons baking powder
3/4 teaspoon fine sea salt
1 1/2 cups finely chopped pecans
Flaky sea salt, for sprinkling

Steps:

  • Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
  • In the bowl of a stand mixer fitted with the paddle attachment (or in a large bowl with a hand mixer), cream the butter and brown sugar until light and fluffy, 3 to 4 minutes. With the mixer running on low speed, add the maple syrup in a slow, steady stream and mix to combine.
  • Scrape the bowl well, then add the egg and mix on medium speed until the mixture is well combined. Beat in the vanilla.
  • Add the flour, baking powder and fine salt to the mixer and pulse until it starts to combine, then scrape the bowl well and mix on low speed until uniformly combined. Add the pecans and mix until evenly incorporated.
  • Scoop the dough into 2 tablespoon-size rounds on the prepared baking sheets, staggering the rows and leaving at least 1 1/2 inches between each cookie to allow room to spread. Sprinkle flaky sea salt on the surface of each cookie. Transfer to the oven and bake until the cookies are lightly golden around the edges, 15 to 18 minutes. Transfer to a cooling rack to cool before serving.

Categories     Lunch/Snacks

Time 1h

Yield 56 serving(s)

Number Of Ingredients 8

nonstick cooking spray
1 cup white sugar
1 cup brown sugar
2 cups light corn syrup
1 lb butter
2 cups heavy cream
2 teaspoons vanilla extract
8 cups pecans

Steps:

  • Line 2 baking sheets with aluminum foil.
  • Coat with nonstick cooking spray.
  • (I have found that using Release aluminum foil works better).
  • In a large saucepan over medium heat, combine sugars and corn syrup.
  • Heat to 250 degrees F (120 degrees C).
  • Remove from heat, and stir in butter until melted.
  • Gradually stir in cream.
  • Return to heat.
  • Cook, stirring constantly, until temperature reaches 242 degrees F (116 degrees C).
  • Remove from heat, and stir in vanilla and pecans.
  • Drop by spoonful onto prepared pans.
  • Cool completely, then wrap each piece individually with plastic.

Tips:

  • For a chewier drop, use light corn syrup instead of granulated sugar.
  • To make the drops even more decadent, add 1/2 cup of chopped chocolate chips or butterscotch chips to the batter.
  • If you don't have a candy thermometer, you can test the syrup to see if it's ready by dropping a small amount into a cup of cold water. If the syrup forms a soft ball, it's ready.
  • Be careful not to overcook the syrup, or the drops will be hard and brittle.
  • Let the drops cool completely before storing them in an airtight container. This will help them to stay chewy.

Conclusion:

These Chewy Pecan Drops are a delicious and easy-to-make treat that are perfect for any occasion. They're chewy, sweet, and packed with the flavor of pecans. Plus, they're a great way to use up any leftover egg whites. So next time you're looking for a sweet treat, give these Chewy Pecan Drops a try. You won't be disappointed!
