½ cup shortening
½ cup white sugar
1 egg, beaten
½ cup molasses
⅓ cup hot, brewed coffee
1 ½ cups all-purpose flour
1 ½ teaspoons baking powder
¼ teaspoon baking soda
2 teaspoons ground cinnamon
½ cup raisins
¼ cup butter
2 cups confectioners' sugar
2 tablespoons cold, brewed coffee

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
  • In a large bowl, cream together the shortening and sugar. Blend in the egg, molasses and hot coffee. Sift together the flour, baking powder, baking soda and cinnamon; stir into the molasses mixture until well blended. Mix in the raisins. Pat the mixture evenly into the prepared pan.
  • Bake for about 25 minutes in the preheated oven, or until firm. To make icing, combine butter, confectioners' sugar and cold coffee in a medium bowl; beat until smooth. Frost bars while warm, but allow them to cool before cutting.

cooking spray
1 3/4 cups all-purpose flour (spooned & leveled)
1/4 teaspoon baking soda
1/4 teaspoon coarse salt
1/3 cup unsalted butter (room temperature)
3/4 cup granulated sugar
1 cup unsulphured molasses
4 large egg whites
1/2 cup confectioners' sugar

Steps:

  • Preheat oven to 350 degrees. Lightly coat an 8-inch square baking dish with cooking spray. Ina small bowl, whisk together flour, baking soda, & salt. In a large bowl, using an electric mixer, beat butter & granulated sugar on med-high until pale & fluffy. 4 minutes. With mixer on medium, add molasses & egg whites & beat until combined. With mixer on low, add flour mixture & beat until combined.
  • Transfer batter to dish & smooth top. Bake until a toothpick inserted in center of cake comes out clean. 40-45 minutes. Let cool completely in dish on a wire rack. Invert cake onto a cutting board & cut into 1 1/2-inch squares. (Store uncoated squares in an air-tight container at room temperature, up to 3 days). To serve, toss in confectioner's sugar to coat.

2 teaspoons ground ginger
1 teaspoon ground cinnamon
1 teaspoon baking soda
1/2 teaspoon ground cloves
1/2 teaspoon fine salt
1 stick (4 ounces) unsalted butter, at room temperature
1 cup sugar, plus more for rolling
1/3 cup molasses
1 large egg

Steps:

  • Preheat the oven to 375 degrees F. Line two baking sheets with parchment paper.
  • Whisk the flour, ginger, cinnamon, baking soda, cloves and salt together in a medium bowl. Set aside.
  • Beat the butter and sugar together in a large bowl with an electric mixer on medium-high speed until well combined, about 3 minutes. Add the molasses and egg and beat until lighter in color, about 3 minutes. Add the flour mixture and mix on low until well blended.
  • Using a tablespoon, form the dough into 1-inch balls and roll in sugar. Place each ball 2 inches apart on the prepared baking sheets. Bake until golden and crackled, 12 to 15 minutes; the cookies will still be a little soft. Baking these in 3 batches one sheet at a time gets you the nice, crackly top. The second sheet of cookies can stay on the counter until ready to bake. Form the remaining dough, roll the balls in sugar and place on the now cooled first baking sheet. Allow the cookies to cool for 5 minutes on the baking sheet, and then remove to a rack to cool completely.

1/2 teaspoon cinnamon
1/4 teaspoon ginger
1/8 teaspoon allspice
1/3 cup molasses
3 tablespoons vegetable oil
1 egg (large)
3/4 cup flour
1/2 cup quick-cooking oats (or old fashioned)
1 teaspoon baking powder

Steps:

  • Preheat oven to 350°F.
  • Spray 8 inch square baking pan with nonstick spray and set aside.
  • With a whisk or electric mixer, beat together brown sugar, spices, molasses, oil and egg.
  • In a separate bowl, combine flour, oats and baking powder.
