1/2 cup heavy cream
1 tablespoon sugar
4 ounces sour cream
6 ounces homemade mini marshmallows, approximately 3 cups
1 cup clementine orange segments, approximately 6 clementines
1 cup chopped fresh pineapple
1 cup freshly grated coconut
1 cup toasted, chopped pecans
1/2 cup drained maraschino cherries

Steps:

  • Place the cream and sugar into the bowl of a stand mixer with the whisk attachment and whip until stiff peaks are formed. Add the sour cream and whisk to combine. Add the marshmallows, orange, pineapple, coconut, pecans and cherries and stir to combine. Transfer to a glass serving bowl, cover and place in the refrigerator for 2 hours before serving.

I am not big on ambrosia usually, but this stuff is great. It turns out pink because of the cherries, so it is great for Christmas, Valentines, girl's tea parties, etc. Serve in clear footed dishes, and it makes it extra pretty. Not too sure of can/container sizes, just use the regular size Cool Whip, pineapple, etc. Since this is ambrosia you can play with the ingredients a bit,but we really thought this was the perfect balance.

1 angel food cake or small pound cake cut into 1 inch slices
canola oil cooking spray
1 1/2 lb about 6 cups) cherries, pitted and halved
2 bananas, peeled and thinly sliced
1 1/2 c flaked unsweetened coconut
3 Tbsp orange juice, more to taste

Steps:

  • 1. Preheat a grill for medium heat cooking. Very lightly oil the cake slices with cooking spray, then grill until browned and marked, 1 to 2 minutes per side. Place on a cutting board and cut into 1-inch cubes.
  • 2. In a very large bowl, combine cherries, bananas, coconut and orange juice and toss to coat. Add cake cubes and toss just until coated. Add a few more tablespoons orange juice to further moisten the cake if desired.
