7 tablespoons unsalted butter
1 1/2 cups graham cracker crumbs (about 9 whole crackers)
3 tablespoons granulated sugar
8 ounces cream cheese, softened
1 cup powdered sugar
1 teaspoon pure vanilla extract
1 container cool whip, 8 ounces
1 can cherry pie filling, 21 ounces

Steps:

  • Add the butter to a medium bowl. Microwave for 30 seconds or until melted. Add the graham cracker crumbs and sugar and mix well to combine. Pat the crumb mixture firmly into the bottom of a sprayed 8 x 8 baking dish. Set aside.
  • Add the cream cheese to a large bowl. Mix with a mixer until the cream cheese of smooth and free of any lumps. Add the powdered sugar and vanilla and mix well. Add the cool whip and mix until the cool whip and cream cheese are combined, but don't overmix.
  • Spread the filling evenly over the graham cracker crust, using a spoon or offset spatula. Spoon the cherry pie filling over the top and carefully spread it evenly over the filling.
  • Refrigerate for at least 2 hours before serving. I like to leave it overnight.
  • Refrigerate leftovers.

  • Preheat oven to 350°F.

2 1/2 c graham cracker crumbs
1/3 c butter, softened
1/4 c brown sugar
STEP 2
1 c whipping cream, ( may substitute cool whip)
1 tsp pure vanilla extract
STEP 3
2 c mini marshmallows
STEP 4
2 c cherry pie filling ( add more if you desire)

Steps:

  • 1. STEP ONE: Preheat Oven @ 350 degrees Step one Ingredients; Mix in Medium Bowl. Set aside 1 cup The remaining Mixture Press in 9 X 13 baking dish. Bake for 5 Minutes.
  • 2. Step Two: Whip cream in a small bowl until stiff. Fold in Vanilla. Spread over the Crumb Mixture above.
  • 3. Step 3: Sprinkle Mini Marshmallows over step 2, Whipped Cream.
  • 4. Step 4: Cover Step 3 (Mini Marshmallows) with Pie Filling. Sprinkle reserved Cup of Crumb Mixture over Pie Filling. Press down Lightly. Chill several Hrs or Over Night. Serves 8-10 in 9 x 13 dish. Kitchen Helper tip: you can use any of your Favorite Pie Fillings; Raspberry, Blueberry, Etc. instead of Cherry.

There's just something about these pillowy puffs of sugary deliciousness that turns them into a gourmet treat. And talk about delicious! 1 tablespoon butter
⅓ cup powdered sugar, divided
1 cup cold water, divided
2 (1 ounce) packages unflavored gelatin (such as Knox®)
1 ½ cups white sugar
1 cup light corn syrup
1 (0.3 ounce) package sugar-free cherry-flavored gelatin mix (such as Jell-O®)
1 teaspoon almond extract

Steps:

  • Generously butter the bottom and sides of an 11x7-inch glass baking dish and sprinkle with 1 tablespoon powdered sugar.
  • Add 1/2 cup cold water to the bowl of a stand mixer and add unflavored gelatin. Set aside to soften.
  • Combine remaining 1/2 cup water, sugar, corn syrup, cherry gelatin, and almond extract in a large saucepan over medium heat. Stir constantly until sugar and gelatin are dissolved. Heat the mixture to boiling, then reduce heat to medium-low. Cook, without stirring, until a candy thermometer immersed in the mixture reads 240 degrees F (115 degrees C), about 30 minutes. Watch carefully that syrup doesn't boil over; reduce heat if necessary.
  • Slowly pour syrup into the softened gelatin in the stand mixer bowl. Beat on low speed, then increase to medium-high and beat until marshmallow mixture has tripled in size. Pour into the prepared baking dish and smooth the top using a rubber spatula. Set marshmallow mixture aside and let stand, uncovered, 8 hours to overnight.
  • Dust a large cutting board with about 1 tablespoon powdered sugar. Loosen sides of marshmallow mixture from the baking dish, lift out onto the cutting board, and rub additional powdered sugar on top. Spray a sharp knife with cooking spray and cut marshmallows into 1-inch squares, 11 rows by 7 rows.
  • Toss marshmallows in a large bowl with remaining confectioners' sugar. Shake off excess sugar and transfer marshmallows to an airtight container.
