Steps:
- 1. Pour 1/4 cup of cherry juice in to a medium bowl (this is the bowl that you will eventually mix all the ingredients in make sure it is big enough)and microwave for about 45 seconds.
- 2. When the juice is done, pour the lime jello into the cherry juice and mix well. Its ok if it doesn't dissolve.
- 3. Drain the rest of the cherries and coarsely chop them. I like to use my small food processor for this.
- 4. Fold in the cool whip with the jello mixture. When that is all incorperated then mix in the chopped cherries.
- 5. Pour the pie mixture into the shortbread crust. Cover and let it chill in the fridge for about 6 hours or over night. Enjoy
Tips:
- For the best flavor, use fresh cherries. If using frozen cherries, thaw them and drain them well before using.
- To make the cherry filling, you can use a cherry pie filling or make your own. To make your own filling, simply combine cherries, sugar, cornstarch, and lemon juice in a saucepan and cook over medium heat until the mixture has thickened.
- When making the limeade filling, be sure to use fresh lime juice. Bottled lime juice will not work as well.
- To make the graham cracker crust, you can use a pre-made crust or make your own. To make your own crust, simply combine graham cracker crumbs, sugar, and melted butter and press into a pie plate.
- Bake the pie at 350 degrees Fahrenheit for 45-50 minutes, or until the crust is golden brown and the filling is set.
- Let the pie cool completely before serving.
Conclusion:
Cherry limeade pie is a delicious and refreshing dessert that is perfect for any occasion. With its sweet and tangy filling and its creamy, graham cracker crust, this pie is sure to be a hit with everyone who tries it. So next time you're looking for a delicious and easy-to-make dessert, give cherry limeade pie a try!
