I used to love to get cherry cordials in my stocking. As a tribute to that memory, Cherry Cordial Cupcakes combines two of my favorite ingredients, cherries and chocolate to deliver a decadent dessert!

1 box devils food cake mix, moist variety
12 oz cream cheese
14 oz can of sweetened condensed milk
2 eggs
2 tsp vanilla extract
1 can(s) cherry pie filling
10 oz dark chocolate chips
22 fresh cherries for garnish
2 can(s) easy frost no fuss frosting

Steps:

  • 1. Preheat oven to 350 degrees. In a large mixing bowl combine cake mix, eggs, condensed milk, vanilla, cherry filling, softened cream cheese and mix with a mixer until smooth. Fold in chocolate chips.Put a cupcake foil in each slot of cupcake pan and fill 3/4 full with batter. Bake according to cake mix directions, usually 18-22 minutes. Allow cupcakes to cool completely and frost. Top with a fresh cherry if desired.

3 eggs, divided
1/2 cup sugar
1 (21 ounce) can cherry pie filling, divided
2 tablespoons coffee-flavored liqueur
1 (18 1/4 ounce) box chocolate cake mix
1/3 cup vegetable oil
3/4 cup water
1/2 cup chocolate chips

Steps:

  • In small bowl, beat cream cheese, 1 egg and sugar until smooth.
  • Stir in 1/3 cup cherry fruit filling, liqueur and chocolate chips; chill.
  • In large mixing bowl, combine cake mix, 2 eggs, oil, water and 1 cup cherry fruit filling.
  • Using electric mixer; blend on low speed for 30 seconds until moistened.
  • Beat at medium speed for 2 minutes.
  • Fill paper-lined muffin cups 1/3 full.
  • Top each with 1 tablespoons of cream cheese mixture.
  • Spoon remaining batter over cream cheese mixture, filling muffin cups 2/3 full.
  • Bake in preheated 350°F oven for 30 minutes or until toothpick comes out clean.

1 jar (10 ounces) maraschino cherries with stems, drained
1/2 cup brandy
1 cup semisweet chocolate chips

Steps:

  • Place cherries in a small bowl; add brandy. Cover and freeze for at least 3 hours., Place chocolate chips in a small heavy saucepan. Cook over low heat until chips begin to melt. Remove from the heat; stir. Return to the heat; cook just until melted. Immediately remove from the heat; stir until smooth., Pat cherries dry. Holding onto the stems, dip cherries into chocolate; allow excess to drip off. Place on a waxed paper-lined pan. Refrigerate for 10 minutes or until firm.
