2 cups Gold Medal™ all-purpose flour
5 tablespoons sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
5 tablespoons cold butter
1/4 cup dried tart cherries, chopped
1/4 cup chopped bittersweet baking chocolate
1 egg
3/4 cup milk

2 teaspoons sliced almonds

Steps:

  • Heat oven to 450°F. Line cookie sheet with cooking parchment paper.

  • On cookie sheet, pat dough with floured hands into 8-inch round. Cut round into 12 wedges, but do not separate. Brush dough with remaining 1 tablespoon milk; sprinkle with 1 teaspoon sugar and the almonds.

CHERRY ALMOND CHOCOLATE CLUSTERS

Time 30m

Yield 12 clusters

Number Of Ingredients 3

1 cup toasted almonds, coarsely chopped
1/2 cup dried cherries, coarsely chopped
6 ounces dark chocolate, finely chopped

Steps:

  • In a medium bowl, toss together the almonds and the cherries. Line a baking sheet with waxed paper.
  • Melt half the chocolate in the top of a double boiler over slightly simmering water, over the lowest possible heat, stirring frequently. Make sure the water is not touching the top pan. Remove the double boiler from the heat and stir in the rest of the chocolate. Remove the top pan with the chocolate in it, gently wipe the bottom of it and set it aside for a moment. Replace the simmering water in the bottom pan with warm tap water. Put the pan of melted chocolate on top of the warm water. This will keep the chocolate at the right temperature while you make the clusters.
  • Stir the fruit-nut mixture into the chocolate. Spoon out heaping tablespoon-sized clusters of the chocolate mixture onto the baking sheet about 1-inch apart. Put them in the refrigerator to set for 15 minutes. Store and serve at room temperature.

Tips:

  • For the best flavor, use fresh cherries. If fresh cherries are not available, you can use frozen or canned cherries, but be sure to drain them well before using.
  • To make sure the shortcakes are cooked through, insert a toothpick into the center. If it comes out clean, the shortcakes are done.
  • If you don't have a pastry cutter, you can use two knives to cut the butter into the flour mixture.
  • Be careful not to overmix the dough. Overmixing will make the shortcakes tough.
  • For a richer flavor, use dark chocolate chips.
  • If you don't have almond extract, you can use vanilla extract instead.
  • Serve the shortcakes warm with a scoop of vanilla ice cream or whipped cream.
  • These shortcakes can be made ahead of time and stored in the refrigerator for up to 2 days.

Conclusion:

These cherry almond chocolate shortcakes are the perfect summer dessert. They're easy to make and absolutely delicious. The shortcakes are fluffy and moist, and the cherry almond chocolate filling is rich and decadent. Serve them warm with a scoop of vanilla ice cream or whipped cream, and you'll have a dessert that everyone will love.
