1 Tbsp olive oil
1 medium onion (chopped)
3 garlic cloves (minced)
1 jalapeno pepper (seeded and diced)
1 tsp ground cumin
1 tsp chilli powder
1 lb chicken breasts ((2 medium))
20 oz crushed tomatoes
32 oz chicken broth
14 oz black beans (drained and rinsed)
14 oz corn (drained and rinsed)
1/2 cup cilantro (chopped, divided (reserve 1/4 of it for garnish))
1 lime (juiced)
1 tsp salt (or to taste)
1/4 cup olive oil
8 corn tortillas ((6" tortillas))
1 large avocado (diced)
1 lime (cut into wedges, to serve)

Steps:

  • Preheat a pan with 1/4 cup oil over medium-high heat. Cut tortillas into thin strips and fry them in batches in the hot oil until crisp. Remove from the pan and allow them to drain on a paper towel. Repeat with remaining tortilla strips, adding more oil as needed then set aside.
  • Preheat a pot with oil over medium-high heat. Add chopped onion, garlic and chopped jalapeño and sauté until veggies soften.
  • Add whole chicken, corn, beans, chilli powder, cumin, crushed tomatoes, salt, ¼ cup of cilantro and chicken broth. Bring to a boil and let simmer for at least 25 minutes.
  • Remove chicken from the pot and shred it using 2 forks. Add shredded chicken back to the soup and simmer another 5 minutes then add lime juice.
  • Serve the soup with some tortilla strips, pieces of avocado, fresh cilantro and lime wedges.

Still other soups are thickened with bread or potato, but the tortillas give it a full mouthfeel. It's a great cooking lesson that yields a delicious dish.

1 cup (160 g) diced yellow or white onion
1 cup (120 g) diced carrot
1 cup (100 g) diced celery
2 tablespoons (30 ml) olive oil, plus more if needed
2 cloves garlic, minced
1 tablespoon (8 g) ancho chile powder
1 teaspoon dried oregano
1 teaspoon ground cumin
1/4 teaspoon freshly ground black pepper, or to taste
4 cups (960 ml) chicken stock, homemade or store-bought
1 teaspoon kosher salt, or to taste
2 corn tortillas, plus 3 more, thinly sliced and deep-fried for garnish
1 cup (140 g) shredded roasted chicken breast
2 to 3 tablespoons (30 to 45 ml) fresh lime juice
1/2 cup (20 g) chopped cilantro
1 avocado, pitted, peeled and diced, for garnish
1 cup (120 g) shredded Mexican cheese blend or cheddar cheese, for garnish
1 lime, cut into wedges, for garnish

Steps:

  • In a large Dutch oven over medium heat, cook the onion, carrot and celery in the 2 tablespoons olive oil, stirring occasionally, for 3 to 5 minutes, or until soft.
  • Add the garlic, chile powder, oregano, cumin and black pepper. Stir for 3 to 4 minutes, being careful not to burn the dry ingredients. Add more oil if needed.
  • Add the chicken stock and salt, bring to a boil, then reduce the heat to a low simmer and cook for about 5 minutes.
  • Toast the 2 tortillas over a burner flame until slightly charred. Tear into pieces and place in a blender jar, then ladle in about 1 1/2 cups (355 ml) of the hot soup from the pot. Carefully blend until smooth and return to the soup pot. (See Cook's Note.)
  • Add the roasted chicken to the soup and let simmer for 5 more minutes.
  • Just before serving, add the lime juice and cilantro. Taste and adjust the seasoning. Serve topped with lots of chopped avocado, shredded cheese, fried tortilla strips and lime wedges.

5 cloves garlic, smashed
1 onion, quartered
2 habanero chiles
1 jalapeno (with seeds), halved lengthwise
1/2 bunch cilantro
3 tablespoons fresh lime juice, plus more if needed

Steps:

  • Bring the chicken, garlic, onions, habaneros, jalapenos and 1 gallon water to a boil in a large pot. Skim the foam from the surface. Reduce the heat to medium and simmer, skimming the surface frequently, until the chicken is cooked through, about 1 hour.
  • Remove the chicken from the broth. Strain the broth into another large pot. Return the chiles to broth and discard remaining solids. Shred chicken meat and discard the skin and bones. Set the chicken aside for future use.
  • Meanwhile, set the pot with the strained broth over medium heat and add the cilantro. Bring the broth to a simmer and cook until it reduces to 8 cups, about 1 hour. Discard the cilantro. Stir in the lime juice. Season with salt and pepper, and add more lime juice if desired. Return the chicken to the broth. Top with cilantro, tomatoes, avocado, queso fresco, tortillas and roasted corn, if using.

5 large plum tomatoes (about 1 pound), cored and halved
1 white onion, peeled and quartered
12 ounces cherry tomatoes (about 2 heaping cups)
2 jalapeños, stemmed and halved, 1 seeded and de-ribbed
8 garlic cloves (unpeeled)
1/4 cup vegetable oil
1 1/2 teaspoons coarse kosher salt, plus more to taste
2 tablespoons tomato paste
2 1/2 teaspoons ground cumin
2 teaspoons dried oregano
1 teaspoon onion powder
1 teaspoon garlic powder
1½ pounds boneless, skinless chicken thighs
2 carrots, peeled, halved lengthwise and thinly sliced
6 cups chicken broth or stock
1 avocado, peeled, pitted and cubed
1 lime
Tortilla chips
Any combination of hot sauce, cilantro, queso fresco, for topping

Steps:

  • Heat a broiler with a rack 4 to 6 inches from the heat source. Line a sheet pan with foil and arrange the plum tomatoes on it, cut sides up. Add the onion, cherry tomatoes, jalapeños and garlic, distributing them evenly, then broil for 15 minutes, checking and rotating the pan every 5 minutes to ensure the vegetables char evenly. (You want the vegetables to be blackened in many spots, slumped and sizzling. Many of the cherry tomatoes will have burst.) Let the vegetables sit 1 or 2 minutes, until just cool enough to handle.
  • Warm the vegetable oil in a large pot or Dutch oven over medium-high. Transfer the charred onion to a cutting board, roughly chop it, and add it to the pot, along with the salt. Cook, stirring occasionally, until softened, about 5 minutes.
  • Meanwhile, discard the garlic skins then chop the garlic, jalapeños and plum tomatoes. Lift two sides of the foil and tip the cherry tomatoes and any juices into a bowl; set aside for the salsa.
  • Add the chopped garlic, jalapeño and plum tomatoes to the pot, and cook, stirring often, until slightly reduced and glossy, about 2 minutes. Add the tomato paste, cumin, oregano, onion powder and garlic powder, and cook, stirring constantly, until toasted and fragrant, 1 to 2 minutes. Add the chicken thighs, carrots and broth, and scrape the bottom of the pot to loosen any browned bits.
  • Increase the heat to high, cover the pot and let the soup come to a boil. Uncover the pot, reduce the heat to medium-high for a medium-brisk simmer, and cook, stirring once or twice, until the chicken and carrots are tender, 15 to 20 minutes.
  • Meanwhile, gently fold the avocado into the cherry tomatoes; add the juice of half the lime and season to taste with salt.
  • With a slotted spoon or tongs, transfer the chicken to a bowl. Coarsely shred and break up the meat with a fork, then add it back into the pot. Squeeze in the juice of the remaining half lime, and add more salt if necessary.
  • Serve the soup in bowls topped with crushed tortilla chips and spoonfuls of the tomato-avocado salsa. Pass hot sauce, queso fresco and/or cilantro at the table, if desired.

1 whole chicken boned and quartered
Rub with a combination of:
½ cup fresh chopped cilantro
2 Tbl Fresh chopped garlic and a seasoning blend of
1 tsp black pepper
1 tsp chili powder
1 tsp cumin
1 Tbl paprika
Then marinate overnight in a combination of
1 cup of oil
Juice of 1 lime
For the soup:
½ gallon of chicken stock or broth
½ gallon of water
1 large onion rough chopped
1 large sized green pepper rough chopped
15 peeled baby carrots cut in half length-wise
2 stalk of celery diced small
1-2 serrano chilies deseeded and minced
2 Tbl paprika
2 ½ -Tbl Chili Powder
3-Tbl fresh chopped Garlic
1-Tbl whole dried cumin seed
Light olive oil
Salt and Pepper to taste
1 10 oz can diced tomatoes any brand
Garnish:
2 cups of your favorite Spanish rice, or Chef Willies Spanish Rice recipe.
12 fresh corn tortillas chopped into small French fry size strips and fried in vegetable oil until crisp, salt to taste, or use your favorite fried tortilla chips/strips
2 cups of your favorite Pico de Gallo, chunky fresh salsa, or Chef Willies Pico De Gallo Recipe
1 ½ cups Total Shredded cheddar and Monterey Jack cheese
½ cup fresh chopped cilantro
Avocado Quarters fanned

Steps:

  • Instructions: In your large pot, sauté your vegetables until they become translucent and then add your dried spices and your chopped garlic sauté until the vegetable just start to caramelize then add your water, chicken stock/broth, and diced tomatoes with the juice. Bring to the boil and reduce your heat to just a bubble a second. Add a handful of your tortilla chips at this time all crumbled up and mix thoroughly. Using your pre-heated heavy cast iron pan on medium heat, sauté your chicken until it is nicely browned on all sides but not cooked through. Place the whole pieces into the soup and take a cup of your soup stock and pour into the cast iron pan and lightly scrape the bottom of the pan, let it come to the boil, and pour it into your soup. At this time, only lightly salt in order to flavor the soup and the chicken. Allow your soup to cook for a minimum of 2 hours, de-fatting the top of the soup with a ladel, and then until your chicken is fork tender, at this time use your tongs and pull apart the chicken meat into servable pieces At Service Time: Place in bowls 3-4 Tablespoons of Spanish Rice, soup and then top with a good portion of tortilla strips, your fanned avocado, a well rounded tablespoon of salsa, a good pinch of cheese and another pinch of cilantro. ENJOY!!!
