HOMEMADE CHEEZ-ITS RECIPE

Homemade Cheez-Its Recipe image

Because they incorporate cream instead of the more common butter, these homemade crackers brown more flavorfully as they bake, creating a deep, nutty, grilled cheese sort of vibe. Eat 'em out of hand, or serve with hearty soups, stews, and chilis.

Time 2h

Number Of Ingredients 12

For the Dough:
6 3/4 ounces all-purpose flour (1 1/3 cups; 190g), plus more for dusting
2 teaspoons baking powder
2 teaspoons sugar
1 1/2 teaspoons (6g) Diamond Crystal kosher salt; for table salt, use half as much by volume or use the same weight
1 (8-ounce; 227g) block cheddar cheese, preferably sharp and yellow, grated finely (see note)
8 ounces heavy cream (1 cup; 225g)
For the Egg Wash:
1 large egg
1 large egg yolk
1/2 ounce water (1 tablespoon; 15g)
1/4 teaspoon (1g) Diamond Crystal kosher salt, plus more for sprinkling

Steps:

  • For the Dough: Adjust oven rack to middle position and preheat to 375°F (190°C). Whisk flour, baking powder, sugar, and salt together in a medium bowl. Toss cheddar with dry ingredients until well combined. Stir in cream, mixing with a flexible spatula until dough comes together. Transfer to a lightly floured surface, knead until pliable and smooth, then divide in half. On a lightly floured surface, roll each portion into a roughly 15- by 11-inch rectangle, no more than 1/8-inch thick. Transfer each to a parchment-lined half sheet pan, then cut into 1-inch squares using a fluted pastry wheel.
  • For the Egg Wash: Whisk egg, yolk, water, and salt together in a small bowl. Brush over prepared dough, then sprinkle with additional salt to taste. Using a bamboo skewer or chopstick, press a small indentation into the center of each dough square. (This is strictly for a Cheez-It look and is therefore optional.) Bake until golden brown, about 24 minutes. Cool to room temperature and enjoy immediately, or store up to 1 month in an airtight container at room temperature.

Time 25m

Yield 275

Number Of Ingredients 7

8 oz cheddar cheese, shredded (I used sharp cheddar)
4 Tbsp butter, cold
1 cup flour (I used whole wheat)
1/2 tsp salt
1/8 tsp onion powder
1/8 tsp garlic powder
2-3 Tbsp water

Steps:

  • Combine shredded cheese, butter, salt, onion powder and garlic powder in a food processor, if available. Otherwise, combine ingredients in a large bowl.
  • Add flour and again pulse until the mixture resembles breadcrumbs.
  • Add 2 Tbsp of water and pulse (or mix using your hands) until the mixture resembles dough. This took a couple of minutes in my food processor, and a little bit longer using my hands. Add the remaining tablespoon of water if the dough is too dry.
  • Divide the dough into thirds (or roll into logs), cover and put in the fridge for 1-2 hours.
  • Preheat the oven to 350F.
  • Either roll out the dough and cut into squares or sliced pieces from the logs and place on a cookie sheet lined with parchment paper or a Silpat mat.
  • Bake for 15-17 minutes. Crackers are done when they are a light to a medium golden brown.

Time 38m

Yield 8-10 chicken tenders, 4-5 serving(s)

Number Of Ingredients 6

8 -10 chicken breast tenders
1/2-1 cup Cheez-It crackers
1/2 cup milk
1 egg
salt
pepper

Steps:

  • Preheat oven to 350 degrees.
  • Take the milk, egg, a little salt and pepper and whisk together in a bowl, put aside.
  • Crush the cheeze its in a ziploc bag, okay to have small chunks here and there, pour onto a plate.
  • Take chicken and dip in milk mixture and then roll in cheeze its.
  • Place on another plate and continue until all chicken is coated.
  • I love to run each piece through x2 to get extra coating and use the whole mix.
  • Place on baking sheet and bake 20-30 minutes depending on size.
  • Cool and serve, very yummy with ranch dressing as a dip.

Tips:

  • Use a sharp knife or pizza cutter. This will help you get clean, even cuts.
  • Don't overwork the dough. Overworking the dough will make it tough.
  • Chill the dough before baking. This will help the dough hold its shape and prevent it from spreading too much.
  • Bake the crackers until they are golden brown. This will ensure that they are crispy.
  • Let the crackers cool before serving. This will help them to crisp up even more.

Conclusion:

These Cheez-Its with a Zing are a delicious and easy-to-make snack that is perfect for any occasion. They are also a great way to use up leftover cheese. With a few simple ingredients and a little bit of time, you can make your own delicious Cheez-Its at home. So next time you're looking for a tasty snack, give this recipe a try!
