1 pound bulk pork sausage
1 medium onion, chopped
1/4 cup butter, melted
2 cups shredded cheddar cheese

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce the heat; simmer, uncovered, until tender, 8-10 minutes. 3 c potatoes, peeled, boiled and cubed
1 lb skinless smoked sausage
4 Tbsp butter
4 Tbsp flour
2 c milk
1/2 tsp salt
1/4 tsp pepper
1/8 tsp paprika
1/2 lb velveeta cheese cubed
1/2 c shreded cheddar cheese

Steps:

  • 1. Cut skinless smoked sausage in half, lengthwise, and then chop into 1/2" pieces. Cook in a frying pan for about 15 minutes, turning frequently to slightly brown.
  • 2. Preheat oven to 350°F
  • 3. Place potatoes in 2 quart casserole. Add cooked meat and give it a gentle toss.
  • 4. Mix all remaining ingredients (except for shredded cheese & the paprika) in a saucepan over medium heat until warm, melted and smooth. (stir constantly.) Pour cheese sauce over potatoes and meat.
  • 5. Sprinkle shredded sharp cheddar cheese on top, and then sprinkle paprika evenly over the top. Bake for 35-45 minutes (watch, until golden brown on top).

1 teaspoon olive oil
3 cups elbow macaroni
1 pound smoked beef sausage, cut into bite-size pieces
2 (14.5 ounce) cans stewed tomatoes, chopped, juices reserved
1 sweet onion, diced small
2 ounces shredded sharp Cheddar cheese
2 ounces shredded Monterey Jack cheese
2 teaspoons olive oil, or more to taste
1 teaspoon dried parsley flakes
¼ teaspoon onion powder, or more to taste
¼ teaspoon garlic powder, or more to taste
salt and ground black pepper to taste
1 (8 ounce) package shredded American cheese (such as Kraft® Melts)

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13-inch baking dish and oil with 1 teaspoon olive oil.

10 -12 medium potatoes (peeled or skin on, chopped to about 2in)
2 links smoked sausage, cut up
2 -4 cups cheese (of your choice, depends on how cheesy you want it)
1/2 cup butter (salted or unsalted, 1/2 melted, 1/2 sliced)
salt (to taste)
pepper (to taste)
garlic powder (to taste)
1 small onion, chopped (I use frozen chopped)
1 small green pepper, chopped (I use frozen chopped)
