AKA 'Diablo Dip,' this is creamy, spicy, gooey, crunchy, and so tasty! Great served with chips or spread on a bacon cheeseburger. I make mine with low-fat cream cheese and sour cream, and no one can tell because there is so much other taste going on. Wonderful!

Tips:

  • Use fresh ingredients. Fresh jalapeños will give your dip a brighter flavor than canned or pickled jalapeños. If you can't find fresh jalapeños, you can substitute canned or pickled jalapeños, but be sure to drain them well before adding them to the dip.
  • Don't be afraid to adjust the heat level. If you like your dip spicy, add more jalapeños or cayenne pepper. If you prefer a milder dip, reduce the amount of jalapeños or cayenne pepper, or omit them altogether.
  • Use a good quality cheese. The type of cheese you use will have a big impact on the flavor of your dip. Use a cheese that melts well and has a good flavor. Some good options include cheddar, Monterey Jack, and pepper Jack cheese.
  • Shred your own cheese. Pre-shredded cheese contains additives that can prevent it from melting smoothly. Shredding your own cheese will give you a smoother, creamier dip.
  • Don't overcook the dip. Overcooking the dip will cause the cheese to become tough and rubbery. Cook the dip just until the cheese is melted and bubbly.
  • Serve the dip immediately. Cheesy jalapeño dip is best served immediately after it is made. The longer it sits, the more the flavors will meld together and the spiciness will mellow.

Conclusion:

Cheesy jalapeño dip is a quick and easy appetizer that is perfect for parties, potlucks, and game days. It is also a great way to use up leftover cheese and jalapeños. With its creamy, cheesy texture and spicy kick, cheesy jalapeño dip is sure to be a hit with your guests.
