Time 45m

Yield 8 serving(s)

Number Of Ingredients 8

3 tablespoons margarine or 3 tablespoons butter
3 tablespoons flour
2 cups milk
1 1/2 cups shredded cheddar cheese
1 tablespoon dijon-style mustard
2 cups cooked ham, cubed
1 (24 ounce) bag frozen hash brown potatoes
1 (10 ounce) package frozen chopped spinach, thawed & squeezed dry

Steps:

  • Preheat oven to 350F degrees.
  • In a large saucepan, melt margarine; stir in flour.
  • Add milk all at once--cook& stir until bubbly; cook 1 minute more.
  • Remove from heat& stir in cheese& mustard.
  • Set aside.
  • Place half of the ham in an ungreased 2-quart casserole dish.
  • Top with half of the hash browns& half of the cheese sauce.
  • Spread the spinach on top of the cheese layer.
  • Repeat layers with remaining ham, potatoes& cheese.
  • Bake uncovered for 30 minutes, or until heated through.

Tips:

  • Use frozen hash browns. Frozen hash browns are easier to work with and will cook more evenly than fresh hash browns.
  • Shred your own cheese. Pre-shredded cheese often contains additives that can make it clump together. Shredding your own cheese will give you a smoother, more flavorful casserole.
  • Don't overcook the casserole. The casserole is done when the cheese is melted and bubbly and the hash browns are golden brown. Overcooking will make the casserole dry and tough.
  • Serve the casserole immediately. The casserole is best served hot out of the oven. It can be reheated, but it will not be as good as when it is freshly made.

Conclusion:

This cheesy ham n' hash browns casserole is a quick and easy meal that is perfect for a weeknight dinner. It is also a great way to use up leftover ham. The casserole is cheesy, flavorful, and filling. It is sure to be a hit with your family and friends.
