4 slices bread, crusts removed
1 ½ cups skim milk
1 cup egg substitute (such as Egg Beaters®)
1 tablespoon chopped fresh chives
6 slices cooked bacon, crumbled
1 cup Cheddar cheese

Steps:

  • Spray a 9-inch square baking dish with cooking spray. Place bread slices in a single layer in the bottom of the prepared baking dish.
  • Whisk milk, egg substitute, and chives together in a bowl; pour over bread slices into prepared baking dish. Sprinkle bacon crumbles over the top. Cover the dish with plastic wrap and refrigerate, 8 hours to overnight.

12 ounces bacon (cut into 1″ pieces)
12 ounces breakfast sausage
1 medium onion (chopped)
32 ounces frozen hash brown potatoes (cubed)
7 ounces ham (diced)
2 cups shredded mild cheddar cheese
8 large eggs
2 cups milk
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder

Steps:

  • Spray a 9×13″ baking dish with cooking spray. Preheat oven to 350 degrees F.
  • In a large frying pan over medium-high heat, cook the bacon pieces just until fully cooked and beginning to become crispy. Don't overcook. With a slotted spoon, remove the bacon to a bowl, leaving the grease the pan.
  • In the same frying pan over medium-high heat, cook the sausage, breaking up the links so that you have bite-sized pieces (or smaller). When sausage is about halfway done, add the onion and continue cooking until the sausage is fully cooked according. With a slotted spoon, remove the sausage/onion mixture to a bowl, leaving the grease in the pan.
  • After both the bacon and the sausage are cooked and removed from the pan, add the hash brown potatoes to the frying pan. Cook the potatoes over medium heat in the remaining grease until they are softened and slightly browned. Layer the hash browns in the bottom of the prepared baking dish.
  • Layer the cooked bacon, the sausage/onion mixture, and the ham evenly on top of the hash browns. Next, sprinkle the cheese is evenly on top of the meats.
  • In a large bowl, whisk together the eggs with the milk, salt, pepper, and garlic powder. Pour the egg mixture on top of the layered ingredients in the baking dish.
  • Bake in the oven for about 35-40 minutes, or until the egg is completely set and the cheese is hot and bubbly.

6 red potatoes, chopped
1/3 cup onion, chopped fine
2 tablespoons butter
2 cups cooked ham, chopped
1 1/2 cups broccoli, chopped and steamed
4 ounces neufchatel or light cream cheese, cubed
1 1/2 cups cheddar cheese, grated
4 slices bacon, cooked

Steps:

  • Heat the oven to 350 degrees and spray an 8x9" baking pan. Fill a pot with water and heat over medium heat. Add the potatoes and boil until tender when pierced with a knife, about 8 minutes. SEE NOTE Drain the potatoes and set aside. In a skillet over medium heat, add the butter and once it begins to melt add the onion. Saute until tender, about 3 to 4 minutes. Dump the onion and butter into the pot with the potatoes and add the broccoli, ham and cream cheese. Stir to combine, not worrying about spreading the cream cheese as it should be left in clumps and dump into the baking dish. Top with cheese and bake at 350 degrees fahrenheit for 25 to 35 minutes or until heated through. Top with bacon the last minute and serve! Cook's note: It's key that you cook the potatoes until tender during this step or they will still be too raw even with baking for the dish to be enjoyable.

2 medium shallots chopped
5 large eggs
2 1/4 cup(s) milk
1 teaspoon(s) each garlic powder, onion powder and salt
1/2 teaspoon(s) celery seeds and black pepper
1 cup(s) shredded swiss cheese
1 cup(s) shredded monterery jack cheese
1/2 cup(s) shredded sharp cheddar cheese
5 slice(s) bacon
1/4 cup(s) chives finely chopped

Steps:

  • Cook the bacon drain and chop into pieces. Set aside. Preheat oven 350 degrees. Spray a 9 x 13 pan with cooking spray

1 cup whole milk
