2 c cooked ham, chopped
1 1/2 c monterey jack cheese, shredded
1 1/2 c swiss cheese, shredded
1 can(s) 11-oz. can mexicorn, drained

Test with a knife inserted into the center -- it should come out clean. Allow casserole to cool for 5 minutes and then cut into squares.

Tips:

  • Choose Fresh Ingredients: Use fresh corn kernels for the best flavor and texture. If using frozen corn, thaw it completely before using.
  • Use a Good Quality Cheese: The type of cheese you use will greatly impact the flavor of the corn squares. Use a sharp cheddar cheese for a bold flavor, or a milder cheese like mozzarella or Monterey Jack for a more subtle flavor.
  • Don't Overmix the Batter: Overmixing the batter will result in tough corn squares. Mix just until the ingredients are combined.
  • Bake Until Golden Brown: Bake the corn squares until they are golden brown on top. This will ensure that they are cooked through and have a slightly crispy crust.
  • Serve Warm or at Room Temperature: Cheesy corn squares are best served warm or at room temperature. They can be enjoyed as a side dish, appetizer, or even as a main course.
