1/4 cup fine cornmeal
1/4 cup whole wheat flour
1 teaspoon salt
1 pinch baking soda
3/4 cup cheddar cheese, grated
2 green onions, chopped
1 egg
1/4 cup milk
1 tablespoon olive oil

Steps:

  • Carefully slice corn kernels from leftover cobs and set aside. Then, in a medium bowl, whisk together cornmeal, flour, salt and baking soda.
