1 large onion, diced fine
1 1/2 Tbsp olive oil
2 Tbsp butter
3 Tbsp flour
1/2 tsp salt or more, to taste
1/4 tsp fresh ground black pepper or more, to taste
1 clove garlic, minced fine
2 c 1" asparagus pieces
2 c milk
1 - 14.5 oz can of chicken broth or 2 cups
2 c potatoes, cubed (approx 3 medium or 4 small potatoes)
1 c cheddar cheese, shredded
1/2 c cream or sour cream

Steps:

  • 1. In a large saucepan cook onion in oil over medium heat until tender. Add butter, when melted add garlic, salt and pepper, sprinkle flour over onion and stir to coat. Cooking a minute or two. 1 small white onion, chopped coarse (weighing about 4 oz)
1/2 lb fresh green beans, chopped in 1-inch pieces
1/2 lb red potatoes, peeled and diced
1/8 lb mushroom, very thinly sliced
1/2 gallon low sodium chicken broth
1 cup pinot grigio wine, or any other dry white wine
1 lb fresh asparagus, chopped in bite size pieces
1 tablespoon salt
1 1/2 teaspoons freshly ground black pepper
3 cloves garlic, crushed
1 tablespoon dried leaf thyme
1 bay leaf
1 cup whole milk
8 ounces cream cheese
3/4 lb provolone cheese, shredded
1/2 lb mild cheddar cheese, shredded
water, as needed

Steps:

  • In a large, heavy stock pot, melt butter over low heat.
  • Add onion, beans, potatoes and mushrooms and stir fry for 4 to 6 minutes.

I was looking for a new way to eat asparagus and found this recipe in The Amish Cook at Home. I'm amazed at how simple yet delicious many of their recipes are (they look like you really worked hard). The potato thickens the soup, and it's a light color like a cream sauce. I left the skins on my potatoes and used probably a cup of onion, but otherwise I followed the recipe as listed. Make sure you whisk the milk and flour together (I added the flour slowly to the milk) or you'll end up with flour clumps. The asparagus stays nice and crisp. A variation suggested by the author is to sprinkle crumbled bacon on top as a garnish (now wouldn't that be heavenly).
